This is a Japanese snack. Traditionally, red bean paste are stuffed between two pieces of hotcake. Put in other fillings according to your own liking for a twist. Try peanut butter, jam or even ice cream!
Ingredient and Portion
eggs 2pcs
Sugar 3oz
water approx.70ml
self-raising flour 3 1/2oz
baking soda 1/2 tsp
vanialla essence 1/2tsp
canned red bean paste
Method
Beat eggs in large bowl until light.Add in sugar a little at a time, and continue beating until light and fluffy.
dissolve baking soda in water and stir into egg mixture together with vanilla essence. Combine well until a smooth paste forms.
Heat pan,grease it slightly, and pan fry the mixture into small round cakes of about 3-4inches in diameter. When cakes are cooled,fill two pieces of pancake with desired amount of bean paste.
Tips
red bean paste can be substituted by peanut butter, cream, jam or chocolate spread according to your own liking. Makes a great snack for kids.
