Wash and remove shells from prawns, lightly cut its back and remove intestines. Wash again and soak up all moisture with a kitchen towel.
Marinade prawns and place in fridge for about 30 mins.
Heat some oil, then shallow fry prawns until its colour changes. drain away excess oil.
Heat some oil, saute carrots, diced scallions and minced ginger, add in prawns and seasonings and stir well. Lastly add in cashew nuts and briefly stir, then serve.
