1. Wash and dry spare ribs. Cut spare ribs into smaller size. Add in cornflour and water first, mix, then add in the rest of seasoning, mix well.
2. Cut green pepper and red pepper into smaller size.
3. Chop garlic and ginger. Slice shallot. Mince black beans.
4. Heat wok. Add in ? tbsp oil. Saute garlic, ginger, shallot, black beans, red pepper and half green pepper. Then add in spare ribs and stir-fry. Sizzle in wine and add the sauce. Cover and when the sauce boils, stew spare ribs with low heat for about 7 minutes.
5. When the spare ribs get cooked, add in the rest of green pepper and thickening. Dish up.
