The Chinese name of this dish is literally "Three cups Chicken", which refers to the 3 main seasonings to the dish-- sesame oil,wine and soya sauce.
Ingredient and Portion
Chicken 1/2pc
sesame oil 1/2 cup
green onion (cut short) 2stalks
Garlic(crushed) 4pcs
ginger few slices
Seasoning
Dark soya sauce 5tbsp
light soya sauce 2tbsp
wine 1/2cup
sugar 2tsp
Method
Rinse chicken under clean water and pat dry with kitchen towel. Cut into small pieces.Briefly cook for 3 minutes in boiling water and remove from water.
Heat sesame oil, fry ginger,green onions and garlic, add in chicken pieces and stir well. Add in seasonings and stir fry until well combined.
Cover up and turn to medium heat and cook until sauce thickens.

置於砂煲中炆煮,風味便佳。
