I went to Back Bar (under Ham & Sherry) for the very first time last Friday, and left my laptop behind.Not until this Monday, did I realise that what happened.Thought I was doomed, but decided to go ask anyway since it couldn't be worse.Boom, they have my laptop and kept it safe & sound just to return it back to me.I only drank their corn colada (which is great btw) so couldn't comment on the food - but I would definitely go visit again because of their supportive staff. Really grateful for the

Thought I was doomed, but decided to go ask anyway since it couldn't be worse.

Boom, they have my laptop and kept it safe & sound just to return it back to me.

I only drank their corn colada (which is great btw) so couldn't comment on the food - but I would definitely go visit again because of their supportive staff.

We ordered a few tapas. The portions were small for the price. The two micro burgers for 168$hkd+10% are impossible to justify. I have a hard time understanding how somebody thought that was ok to sell. The location or venue does not justify this extortionate price. The food is good, but generally not in relationship to value. I had to beg the waiter to bring me some butter, initially being told that they did not “have” any. At the least the manager was professional and kind enough to cancel my order at that point. I suppose a certain crew of hip people who think it’s awesome to overpay keep this place afloat, but they will move on and regular clients will not become repeat clients. Unfortunately as the place has great potential, but somebody needs to review their business plan!

Jason Atherton的餐廳從來沒有讓我失望過,22 Ships、Aberdeen Street Social乃至這一間Ham & Sherry。一位英國名廚把西班牙當地的佳餚和美酒帶過來香港,卻仍然把他那套成功的方程式揮灑自如- 環境輕鬆而休閒、食物味美而細膩。每位客人都不會感到侷促突兀,沒有人在這裡要自抬身價去將就環境,環境會因你是什麼而為你遷就,這大概是我最喜歡這間店的原因。

來了這裡兩次,這是唯一我有重複的前菜。她永遠都會靜靜聶立在Today’s Special那一小角落裡等待懂得欣賞的人,像我會提早十五分鐘到餐廳等你一樣,在期盼中有個夥伴共鳴,何不樂乎?我想,就算你不是像我一般是個薯條痴,你也會感到這種四溢的蒜香味,和即叫即製的香脆,其實薯條真的不用加芝士或煙肉,千百般的醬料,最基本的,最原始的,最好吃。

Hand carved Jamon Iberico de Bellota Jabugo $178
來到Ham & Sherry,因名而訪,先來Ham再叫Sherry才算來過,第一次來的人或許會困擾,因為全都是西班牙文,初接觸會比較迷惘,在這班門弄斧一下,希望有緣人下次帶上他的那位,能說上兩句,讓她誇你兩句。

Jamon是西班牙文的火腿,指豬後腿,而Paleta是指豬前腿,後腿油質會較多,不易乾硬,價格會相對昂貴。而Iberico是指黑蹄伊比利黑豬,法例規定只有這種豬所產的火腿才能稱之為Jamon Iberico。

而其等級亦因飼養方式的不同,由低至高分為Cebo, Cebo de campo和Bellota三種。最高級的Bellota必須將豬隻放養於橡果農場令豬隻本身體重增加最少46公斤,豬隻至少要14個月大,才能稱之為Bellota,如餐單最上那項,就是最好品質的風乾火腿。最後的Jabugo,是產地名稱。

第二項是前腿,第三項不寫任何分級即是沒有任何品質保證,所以價格亦相對非常便宜。Salchichon,
Copita, Lomito 和 Chorizo都是黑毛豬所造的肉腸切片,就不一一詳述。

同時,餐廳放置的那全只風乾火腿,是有着黑色標籤的,亦只有你點了Jamon Iberico
de Bellota Jabugo,才會從那只火腿手切出來予你享用。標籤亦分為黑、紅、綠、白四種顏色,只有黑色才是源自100%純種的Iberico黑蹄豬。所以來到Ham & Sherry想吃Ham還是乖乖地叫上Jamon Ibericode Bellota,那滋味無匹與對。

其實風乾多久,在乎其肉質而不在乎時間,脂肪分佈不佳,風乾幾個月亦會硬而無質,所以西班牙火腿沒有在時間上給予定義,好的風乾火腿,就如眼前這塊,紅潤亮澤,脂紋細密,表面泛起一層薄油,鮮紅如血,紋如大理,躺在麵包上,絕不加蜜瓜,只嚮往和味蕾接觸的那個瞬間,嘴嚼,再嘴嚼,香氣迴腸,纏捲包覆。

22 Ship The Lost Ship $65
第一杯是Palo Cortado,她也是自由度最大的一種雪莉酒類,每一個酒窖有各自的詮譯,但都是在Fino和Amontillado上最加變化,可以說是複雜版,她作為22nd Ship的招牌雪莉酒,入口輕柔,帶有淡淡青蘋果和堅果味,店家為西班牙火腿配上了這樣的 一個她,一呷,不同的陳年,兩極的味道,清新了口腔的咸香,又進一塊。

Octopus, chili, smoked paprika $128
因為我最喜歡坐在吧枱,所以能看到廚師做菜的每個細節,不難發現,廚師做得最多的除了店中名菜quail
eggs toastie外,就是這道前菜。嘗過後,也不難發覺為甚麼了。廚師把已經水滾煮好的八爪魚再添調味,炒香呈上,份量不少之餘,肉質非常彈牙,不辣而香,Paprika之所以為廣大廚師所愛用,有她的原因在。

Tio Pepe en rama $85
配上海鮮的是這一杯最傳統最為廣聞的Fino,雪莉酒的釀造會不斷層積,每次都拿最底層的最多三分之一銷售再把較新的混進去陳年,Fino的酒精濃度大抵在15%-16%間,而這會為酒液覆蓋上一層Flor,又稱為酒花,其隔絕了酒精的氧化,其糖分會降低,偏清爽而微酸,帶有點點海水鹹,像這一杯,很重的雪莉香,亦最易與菜色matching,這次就用來配上了濃烈的八爪魚,因為其香不會被任何味道掩蓋,餘悸猶存。

Brussels Sprouts, jamon, chestnut $68
她通常是作為牛排的伴菜出現,而今天出現在Today’s Special,再為了一些纖維素下肚,就點了抱子甘藍,她和甘藍菜完全不同,和花椰菜和高麗菜同類,伴隨火腿和粟子,香是香,就是味道難以深入,脆和爽,因為沒了牛排的油脂,就用上火腿,有了牛油香,這菜才有成為聚光燈的目光,否則她會太過乾澀。

Lamb Rump $188
Today’s Special的肉類從沒有讓我失望過,由上次的半熟西班牙黑毛豬,到今天的這一道羊臂肉,火喉掌控都非常好,店家其實沒有甚麼複雜的工程去完善菜色,你也可以說她有點流水作業,亦能理解她走不上米芝連大堂的理由,但流水作業研究到極致,也是一種體會,幾多分鐘的烹調,幾多分鐘的調味,一套規限,設計得好,就做得好,就像這裡。羊肉軟腍,微羶,油脂香濃,肉味沉湎,難得處在肉質,是其醍醐。

Alfonso $65
她是一種Oloroso,比起Fino的氧化拒絕,她的製造過程倒反其道而行,在氧化中浮現出另一種味道,脫卻了缺席的鹹與酸,芬芳的甜味油生,醇化了的口感,是種刻意的甜,一瞬而過,不長存,不眷戀,一感到甜的存在就已經消失無踪,就只有下一口來讓你回味,餘下的是杏香,來配你的主菜,而甘做扶持的綠葉。

East India Solera $115
Predro Ximenez這種雪莉酒要用上特定品種的葡萄,曬乾再氧化發酶,是屬於雪莉甜酒的一類,因為甜味得以凝聚,含糖量極高,顏色亦是深如啡褐,如之前的琥珀色完全不同,這一杯選作為餐後酒,有很重的焦糖味,酒體圓潤飽滿,尾韻柔長,像這一夜。餐廳裡的Wine Tasting,以200元可以嘗到四杯為菜而配上的雪莉酒,或是自選四杯,絕對不可錯過。

餐後她淡淡道:「我們走走吧。」

其實走走,有很多人都做不到,兩人一起一定要到一個地方,做某些事,卻沒有好好談過,了解過旁邊的這個人。有時候我很喜歡走走。

我問:「我們到最後為甚麼沒能在一起呢?」她無名指上的戒指閃閃,璀璨如星。
她說:「你就一定要問這個問題嗎?」
我答:「就到四十,希望追求不惑。」
「別裝老,你心智多幼稚年紀有多大,我們都很了解。」她噗哧。

price range 唔算好贵,但亦绝对讲唔上抵食。vegetables 类普遍较美味,其他OK,但要批评乳豬收$300-$400一份但卻达不到相应水平,肉质好老,请检讨。仲有西班牙水果酒,无论红同白,我都认为有改善空间。其他0K正常。

The food is OK but over-priced. I guess you'll need at least HK$500 per head to slightly fill your stomach up. Waited for over 40mins for the mains to be served (while at that time we were the only customers in the restaurant). Probably will not be here again.

This Spanish tapas house is located in Ships Street, which is becoming another landmark for good restaurants in the Wanchai neighborhood. The decoration is interesting, with a lot of blue and white tiles of different patterns, on both the wall and floor. There is an open kitchen and counter where you can sit back and see some of the activities in the kitchen. We got a table on the window side which is comfortable and offering nice privacy as we came early so the place was still relatively quiet.

We ordered a few of the signature tapas, and first is Octopus, Chili and Smoked Paprika. On first bite I was caught by pleasant surprise, as the octopus was so tender and soft that was quite beyond my expectation. And besides the wonderful texture the seasoning was perfect, with the smoked paprika having a beautiful sweet note to accompany the slight spiciness of the chili. It was nothing 'hot' but very appetizing, and got us started with a great experience.

The second tapas is the Selection of Charcuteria, which has four different cold cut, including chorizo sausage slices, salchichon sausage slices, copita iberico and paleta iberico. The two sausages are nice, and personally I like the chorizo more because of the stronger chili and paprika flavors. The two hams are also wonderful, and both of us picked the copita as it got a layer of sweet taste. The paleta is aged 48 months, with an oily sheen and intense savory aromas. A nice assortment but if you know which one you prefer might be best to order that directly.

The third tapas is the Heirloom Tomato, Black Olives, Basil and Pine Nuts. It is a highly refreshing one, with a mix of different tomatoes, of interesting texture, size, sweetness and acidity. The color is also wonderful with the basil adding the fragrance while the pine nuts an additional dimensions. The black olives are chopped finely and then sprinkled along with the dressings so overall it is a fiesta of flavors and though simple, it is a great tapas.

The fourth tapas is Scallops Ceviche, Lemon and Coriander. The very fresh scallops are big in size, and then sliced into the right thickness, with the dressings of lemon juice, some coriander and a slice of radish. The radish got a contrasting bite of crunchy to the tender scallops and again it is simple yet great in taste, as well as offering great presentation which on appearance alone would win over most customers.

The fifth tapas is Jamon, Manchego & Truffle Toastie, with Quail Eggs. The toast is just freshly prepared, crispy on the outside, warm and inside got a piece of jamon ham, manchego cheese and truffle paste, offering very rich, flavorful fillings and with the quail egg yolk seeping on the toast it is something out of this world. Another great one and with the octopus these two are my favorites on the night.

Wrapping up we ordered the Suckling Pig which is on the blackboard and not on menu. The portion is quite big, with the skin roasted to great crispiness, as you can hear the sound when you cut it. On the side there is a nice salsa, a cinnamon and apple puree, as well as the jus. Probably since we already were quite full so this dish was not as appealing to us which is a bit unfair. I am sure if this is served right at the beginning of the meal it would be well-received by everyone.

As its name implies, the place has a good range of sherry but unfortunately I could not try any since I was driving. Maybe next time I should come with some wine buddies for a sherry tasting. With a bottle of still water, the bill on the night was $1026, without any service charge. Seems a little bit high on the price tag but considering the quality of the food and the atmosphere it is quite reasonable in my opinion.

My overall rating is 68/100.

My friend and I wanted to dine out all of a sudden on a Sunday night, maybe to make the last bit of the holiday before blue Monday comes. Having tried 22 Ship and ChicoChica before, we chose this Spanish place for something new. We started our dinner with a glass of sherry which wasn't bad. Next up was the Scallop which got me in total disappointment.  The waitress recommended the dish in several occassion, so we thought why not!  But it didn't turn out well... The scallops weren't fresh enough and the sauce wasn't helping at all.  I would not recommend anyone to try.

My mood was a bit ruined by the scallop but with an unsatisfying stomach, we ordered the Beef Tartare and Croquettes.  Both were ok, nothing astonishing.

We finished up our meal with a Goat Cheese Cheesecake.  Luckily this wasn't bad, otherwise we would be leaving with sad faces.

今個星期五,同亞女去食lunch,叫亞女去攞位先,個侍應見佢一坐低就問佢要sparking water or still water.佢知道sparking water 通常要收錢。咪叫still water . 點知埋單still water 收左我地58蚊。要收錢應同人佢吖!條問題只是2揀1. 通常人都會中伏。 lunch 飲水都要收錢,仲要咁貴,條氣唔順。佢唔係大餐廳(坐三十零人),又唔係大酒店。冇想食lunch飲啖水都要收錢,又冇同人講。條問題無論你點答都係要收錢,伏得好緊要。

今個星期五,同亞女去食lunch,叫亞女去攞位先,個侍應見佢一坐低就問佢要sparking water or still water.佢知道sparking water 通常要收錢。咪叫still water . 點知埋單still water 收左我地58蚊。要收錢應同人佢吖!條問題只是2揀1. 通常人都會中伏。
lunch 飲水都要收錢,仲要咁貴,條氣唔順。佢唔係大餐廳(坐三十零人),又唔係大酒店。冇想食lunch飲啖水都要收錢,又冇同人講。條問題無論你點答都係要收錢,伏得好緊要。

My best friend wanted to find a good restaurant for my birthday and I chose Spanish food and this was the restaurant she picked 😊Heard that this restaurant was awarded by Michelin and from the same team as 22 ships (another Spanish restaurant nearby), we decided to give it a go and try on my birthday. Since we weren't that hungry, we only ordered 4 dishes and 1 dessert to share. Didn't feel like having alcohol during the day so we ordered some juice and sparkling water. Tapas are a good way to chit-chat with your friends without eating a lot 😆 We ordered a paella 🥘, slow cooked egg, an octopus 🐙 tapas, croquettes and churros (no photos of this 😝) to finish off with.

Overall the food was great 👍🏻, the service was so-so (the waiter didn't bring us water until we asked 😅), the seating was comfortable, didn't feel crowded at all. My best dish of the meal would be the seafood paella. The rice wasn't too hard, the seafood was freshly prepared and the portion was just right for the two of us. Didn't know about the price as it was a treat from my friend 😋

My friends and I wanted to relax on a Wednesday afternoon. It was 5:30pm and we were thinking to have go for a quick drink before the rush hour when people starts taking off from work.We went in Ham&Sherry. And there was the Lady with pony tail serving us. She asked us if we were okay to sit at the bar. And then she put us to the seats at the bar right next to the entrance of the restaurant while the other side of the bar is empty.....Later on, she did let us change to a proper table and let us

Later on, she did let us change to a proper table and let us know the table was reserved for 7pm. We made it clear to her that we were there for a quick drink before dinner. Then we ordered 3 glasses of sherry, iberico ham, and chorizo frites. The lady were like "Is that enough? Alright I'm sure you can leave before 7pm." I'm not kidding you this was the exact wording from the lady.

I have been to ham&sherry twice, had similar experience. Sorry, ham&sherry, you are out of my list now. I won't recommend any friends to go to ham&sherry if they are looking for a good dining experience.
