Was walking from Sai Ying Pun to Central after my soy matcha latte and found this cute place's genuine offer.$60 for standard sandwich with 1 main and 2 sides. $65 for standard salad with 1 main and 2 sides. I had this set veggie salad with roasted pumpkin, bell peppers and lettuce with pesto sauce, ingredients are fresh, just with there's a bit more salt or seasoning. $65 well worth and much better than $50+ salad I get from Pret A Manger.Kind of surprised and definitely coming back.

日前在蘇杭街這個上環食肆集中兼兵家必爭之地,經過這間三文治店Knead,被其新派型格的裝修吸引,即本吃小許東西嘗嘗。點了一個牛腩芝士三文治,麵包用rye裸麥,牛肉撕開變得易咬(應為了配合三文治),烤後芝士溶化,雖然有點邪惡,但呢個帶fusion感覺的三文治真係幾好食。看看其menu,其實這店子三文治的麵包及配料可以自選。不過平均要六、七十元可說貴了點,加上份量偏少,當下午茶或女仔食會OK,但像我般的大食男可能會不夠飽。

I have ordered the chicken schnitzel sandwich and the quality of the ingredients is good, the deep fried chicken was well cooked and bread also good with sesame seeds. The only critics that I might say is the yellowish sauce,I think it was the butter one, which wouldn't be so appropriate for this sandwich because it doesn't give the right accent to the whole sandwich. I would have use another type of sauce, more sour such as the tartare sauce or mustard to balance the fried chicken taste. Anothe

[Note to reader: this is one part of my 8-part review series on the Ultimate Sandwich Competition. Here’s a description of the contest: “Crave Magazine is partnering with The Forks & Spoons and online dining platform in search of Hong Kong’s best gourmet sandwiches. Eight of the city’s beloved delis and restaurants will battle it out to show us what they’ve got with their prized carby goodness, from classic Reubens to the reimagined Banh Mi.” I decided to hold my own (completely unofficial) contest, eating all the sandwiches and ranking them.

Rules: I just made up these rules, but I abided by them throughout the contest. Rule #1: Only one sandwich can be crowned The Ultimate Sandwich, and it must be one of the eight entrants. While Crave magazine is giving the award based on sales, my award is completely subjective, based on my own opinion. Rule #2: I must eat the sandwich exactly the way the restaurant serves it, with no additions or subtractions (unless they’re explicitly offered as a choice point): no sauces from the table, no salt, no pepper, nothing. Rule #3: Only The Ultimate Sandwich deserves a smiley-face review. If a restaurant pretends it has The Ultimate Sandwich, but then just has a regular old sandwich, then that restaurant is ipso facto only OK at best, and perhaps frowny-face at worst.]

For the second (real) entry in The Ultimate Sandwich competition, I went to Knead. Its "about" section on its webpage is short enough to quote in entirety:

A new sandwich & salad concept in Hong Kong, sandwiches and salads freshly made for you with the ingredients that you pick! A wide selection of different types of bread, veggies, meat, cheeses and toppings to create your own favourite sandwich or salad, or pick one of our favourite suggestions from the menu.”

That’s a pretty accurate description of the place. They do in fact have a wide selection of the things named, and it’s easy to make your own with the fill-it-out yourself order form. I have only been here once before and I have yet to make my own sandwich here, but this review is about the entrant in the USC: the Steak in Knead (Knead has far too many ‘knead’/ ‘need’ puns, in my opinion).

The sandwich was placed at special #1 on the specials menu, and prominently labeled with #BestSandwichHK. Thus far this was the first hint I’d seen at any restaurant that they were actually knowingly participating in a competition. The menu description differed slightly from the one on Crave’s website: “Sizzling rib eye, chilli onion jam, aioli, chimichurri, tomatoes & rocket on toasted ciabatta.”

Let’s start with the steak. The steak was not sizzling when it arrived, though I’ll admit that I did not expect it to be. It consisted of a piece of steak that extended the length of the ciabatta and was cut into strips after being cooked for convenience. It was seared just on the outside and still very pink in the middle. It had a nice steak-y mouthfeel while not being chewy and since being relatively thin and not cooked through, it got a little cold quickly. The steak was pretty good, but I think it needed a little salt and pepper.

Chimichurri is a meat sauce made of parsley, oregano, roasted garlic, oil, and vinegar. It did not seem to have been applied directly to the meat, though some rubbed off (see picture). Instead, there seemed to be three sorts of “sauces” applied to the bottom of the ciabatta: mayo (aioli), chimichurri, and the “chilli onion jam.” The jam had the strongest flavor, a caramelized onion sweetness, which was reasonably mellow. The jam was nicely balanced by the chimichurri, which was noticeably vinegary. However, when there was too much jam or too little chimichurri on some part of the sandwich, the flavors were a little one-note. The aioli seemed to be a spinning wheel.

The ciabatta was a good choice. It was crisp and the air-holes were yielding to the sauces, while yet not getting soaked through. It didn’t bring much flavor of its own, but let the other flavors stand out. It was thin enough to not dominate with overwhelming breadiness.

Two things I really like on sandwiches and burgers are veggies, like crispy lettuce and juicy tomatoes, and something pickly, like pickles or vinegar. I liked the choice of rocket for this sandwich, a nice spiciness to stand up to the steak, and I thought there could be a little bit more tomato. The chimichurri was good, but I could have used more of it, both for the taste of garlic and vinegar. I tend to lean away from sweet things, and I don’t even like people to put ketchup on my burgers, because it’s always too much. The onion jam (which lacked a hint of chilli) was respectably mellow, but still a bit more sweet and more heavily applied than I ideally would like.

Nevertheless, this sandwich scores lots of points. The whole thing was very thoughtfully constructed. The idea of using chimichurri for tartness was clever. Relying on a good piece of steak, cooked correctly, and then sliced afterward, rather than sauce and cheese, was the sort of confidence a candidate for The Ultimate Sandwich kneads… Oh, God, now I’m doing it… and, as I say, the ciabatta was a nice choice. It pains me to do this, but not everyone can be a winner, and Knead comes in at #2 in the competition.

  沒有什麼氣場的命名,一看就有種健康食物的感覺。而在比賽間嚐盡肉品的眾人一見這清新之選,不禁放鬆心頭大石,叫做緩衝一下。結合肉眼扒辣椒洋蔥醬蒜香醬香草青醬蕃茄火箭菜。夾在外帶硬脆咬口的Ciabatta之中,那煙韌質感讓我不禁想起旅行時光。不出所料,即使有香口的肉眼扒,整體還是不會太膩太重味,輕鬆應戰。

I ordered the Bacon, Brie and Chicken sandwich with avocado on Ciabatta bread. I must say, it does have the taste of a gourmet sandwich as oppose to other sandwich shops. The presentation of the sandwich is mediocre but seriously, I don't really care especially when healthy "fast food" is needed. The chicken breast was absolutely delicious - it was juicy tender. The avocado was a spread, which was refreshing because others tend to do slices of avocado instead but a spread adds more flavor. The b

Essentially, they don't really need to put anymore seasoning with those quality flavors put together. In a sandwich, I look for quality, proportion and the amount of time it took for me wait (Patience is not my virtue). It didn't take more than 10 minutes. Everything was what I had anticipated, if not even more (That chicken breast was really succulent). I would go back to try others once I'm over with this Bacon, Brie & Chicken sandwich!

There can only be so many varieties for sandwiches and most of them are overpriced. When there’s a new sandwich place opened up, you’d walk in and hope to find something different. As I went inside Knead, it gave me a familiar feeling like Nood and Mana. But as I looked at the menu, I saw something new; not only they allow the customers to be the boss, similar to subway, there are choices that you don’t regularly see at sandwich places. For instance, quinoa bread and smoked mackerel, this really is a great alternative for those who usually eat salmon for their intake of omega-3 and protein. The idea of quinoa bread is an interesting idea for me but it taste dry and a bit stale to me, since quinoa doesn't has any special to it, i would rather choose a bagel or 7 seeds bread. the rest of the ingredients all have a very expected taste, nothing special about them. They taste fresh of course, but that really is the basic requirement. The taste of the whole sandwich match my expectation, but there's nothing special about it really. 

The place is quite cozy and good for a relaxing lunch. However, the ingredients they use mostly are quite simple, and to pay $58 for a sandwich you can make at home, I think this is really buying for the convenience.

節食中的女生們在香港用膳的選擇並不多。當大多數中國菜都偏油膩和濃味,她們通常不得不依賴沙律,三文治或者日本料理。三文治總類其實沒幾多,而且大部分定價過高。當有新店開業,你都走進期望能找到新東西。在Knead 內,它給我少許Nood和Mana的感覺。菜單上,我找到了一些新的選擇,他們不僅讓客戶作自主,類似Subway,還有一些你在三文治店不經常看到的食材。例如藜麥麵包和熏鯖魚,為那些平時多吃三文魚攝取omega-3和蛋白質的人士提供多一個選擇。藜麥麵包是很有趣,但它的味道有點乾和不新鮮,藜麥本身沒有什麼特別味道,我寧願選擇比高包或7種子包。其餘所有配料都是我預計的味道,沒有什麼特別。它們味道新鮮,不過這應該是基本條件吧。全份三文治都符合我的預期,但完全沒有什麼特別之处可言。

這個地方舒適好讓打工仔過一個休閒午餐。但是,他們大多用料都非常簡單,付$ 58為一份你可以在家做得到的三文治,這應是用來購買方便而已了吧。

這間新開的三文治小店就在Office附近,由幾位外籍女生打理,平時都見到很多外國人走過來幫襯,今日帶埋小松松來試一試這裏的三文治。小店走簡約路線,我們和小松松就坐在巴枱位置。在眾多選擇中,我點了薄片牛肉法包三文治。牛肉的份量也不至於太少,肉味濃郁,而且亦保持濕潤。火箭菜的用料明顯不是太高級的貨色,但以這個價錢來說還可以。法式麵包卻令人大失所望,一點也不脆,需要花上很大的氣力才能把它咬斷,也太韌了吧⋯⋯飲品方面我們只點了一杯熱綠茶,味道是出奇的好,這裏是用茶葉來泡茶的,綠茶味非常之清香!我們在這裏坐了大概20分鐘,眼見也有不少外國人走過來幫襯,吃件三文治,飲杯咖啡。雖然裏的食物不太合我的個人口味,但我仍然會回來的,加油啊!

在眾多選擇中,我點了薄片牛肉法包三文治。牛肉的份量也不至於太少,肉味濃郁,而且亦保持濕潤。火箭菜的用料明顯不是太高級的貨色,但以這個價錢來說還可以。法式麵包卻令人大失所望,一點也不脆,需要花上很大的氣力才能把它咬斷,也太韌了吧⋯⋯

我的包款是quinoa & grains,一向鍾愛quinoa,家中也是以quinoa做主食。
quinoa同grains這兩款元素加中包中,主要為包增添咬口,味道上不會有太大分別。

熱愛素菜的我當然加了蕃茄、青瓜和菜,沒有醬汁。
主食則選了雞肉,配菜就是茄子和鷹咀豆蓉hummus。
雞肉易咬,味道簡單,但是完全吃不到hummus呢。
hummus本來的味道是頗突出的,是忘記下hummus嗎?

整體來說,麵包新鮮而且價錢相宜。
當然麵包的份量會相對較細。
好吃的麵包實在不容易找到,這裡的沒有再到訪的理由。
knead的唯一可取之處是可自由選擇配料,合適有奄尖胃部的你。

最近,發現上環蘇杭街開了兩間新餐廳,分別是 Supafood 及 Knead!  前者主打有機輕食,後者是一間咖啡店! 有天放工,走到咖啡店 Knead 看看,順便拿單張! 香口甜美的烤南瓜,纖維豐富的雞心豆蓉,煙燻鯖魚帶腥及鹹味,
 配種子芥末籽醬,有點攻鼻!
 多種榖物包包質密度高!而且,混合多種榖物及藜麥,纖維豐富之餘,又有嚼勁!
 食一個作為午餐也剛好夠飽!
 不過不失!

咖啡的奶泡打得夠挺身,卻是咖啡味偏淡不夠突出!
 相對奶味濃重而口感香滑!
