I have always been of the belief that, if a piano player other than the original composer is given the exact same concerto piece - we will still be able to pick up and experience subtle minuit differences between each individual's interpretation of a musical piece. Hainanese Chicken with Rice Set:
This was actually very enjoyable in a sense yet surprisingly it carried a different 'feel' altogether with my experience at other shops. Here, the 'poached' Chicken is also very good indeed. Silkily velvety soft in texture, its actually better than the one served in Northpoint's 胜利小厨 - texture wise at least. On a comparison of the flavouring components, I was surprised how 'naturally' tasting the chicken meat was here when finally served to me.
It also encompasses a great chicken taste too and I really liked it, although on the other hand it was missing the herbal influence from the medicinal soup of which it was cooked in.
If you really enjoy chicken that's intact with its original flavouring but nothing else, then you would love here definitely. Personally, I'm rather undecided at this stage, as I've always thought that the idea of doing the Hainanese Chicken is when it manages to inherit a bit of its cooking broth's taste in an 'exotic' kind of way, rather than it being purely a Chicken only experience. Perhaps that type of chicken taste expectation is best reserved for steaming or hot water cooking methods, which remains loyal to its original chicken taste profile, aka Cantonese style cooked chickens.
I certainly have no complaints here when that's taken into account, since as said previously I haven't settled on one way or another. I just wished that the Chicken skin here can be slightly more flavoursome and not so thick and soft. Perhaps it coud benefit with a longer dip or two in an ice-bath to tighten the skins and make it a bit more 'crunchier'!
The soup here is also quite good indeed without much MSG influence, the sweetness of winter melon and chicken broth working like they have always belonged and meant to be together forever.
So what of the Chicken Rice, you ask? ITS REALLY QUITE GOOD. Even if it probably isn't the best in the world on a relative basis, the shop has done a stellar effort in making it slightly 'aromatic', as well as carrying a slight chicken broth taste as well as a yellowish chicken/garlicky oily coating. I would be nit-picking to make a complaint but certainly this dish could still have room for improvement still, it still needed more flavouring plus it was slightly too soft on this occasion. Having said that, the 'rice' equation of the experience is heaps and bounds better than the rice at 胜利小厨 - despite that having a slightly better chicken.

I just wished..... that they could carry a better dipping sauce and wouldn't mind a caramelized soy-sauce for the customer to use, inorder to enhance the whole experience. And the chicken could be served a bit warmer as well. If anyone knows a better Hainanese chicken - I would love to hear about it as I haven't really researched on this too much!
