金铭并不如潮兴般出名, 但它的分店比后者多, 而且在港九新界也有, 真正的连锁潮州粉面店呢! 点了牛腩牛杂牛筋河, 虽然牛腩不是特别部位, 但肉质也算嫩滑, 而且中间的脂层也不少, 半肥瘦味道口感刚好. 这里的汤头不是清汤, 而是传统卤汁味道, 如果单纯牛腩, 以它质素清汤相当不错, 但加上牛杂还是卤汁好一点.牛筋炆得够腍, 也够胶质, 如果可以粗一点, 口感就更好, 因为切得相对细块. 牛杂没有膻臭味, 而且质素相当不错, 像是草肚的细致和牛肠的顺滑, 最Singature的当然是牛肚内里的脂肪, 又要保留它又要做好清洁, 比起直接铲走脂肪更花心思和时间. 如此一碗乜都有的筋杂腩河, 不用其他小菜, 已够满足.The beef organs from Kamming is great because of the clean texture and the fresh taste.
