在六七年前吃到老妈拌面在台湾的分店, 觉得惊奇的事, 即食面可以成为餐厅唯一的主打, 再加上稍为高档的食材, 就可以上到饭枱. 想不到品牌在香港开始的分店相当多, 也是台湾餐饮品牌在香港开设得店的其中一家. 基本上主食就是品牌的拌面和酱汁, 例如我吃的是椒麻囗味, 加上肥牛和卤蛋, 基本上酱汁的浓烈味道, 盖过了牛肉的肉味, 至于厚实的面条, 不容易煮得太腍, 所以吃起来口感还是可以的. 70多元一碗面, 成本控制相对简单, 边际利润比一般的更多.小食的炸鸡配上豆乳酱, 反而见得出心思, 豆乳酱吃起来似少咸的腐乳, 配上香脆的炸鸡味道突出, 只是炸鸡的炸粉有点好, 吃起来酱汁的味道不能深入鸡肉之中, 有点可惜.I tried this at a Taiwan branch and was amazed that instant noodles were the main dish at a restaurant.
