The Day After Tomorrow:
I must have been in serious holiday mood in anticipating the end of the world. My wife and I have been trying loads of different ramen shops and new Japanese restaurants for the past two weeks.
Once I knew that this shop from Hiroshima focused on spicy sauce, I had to try it, come what may - despite the end of the world.
I planned to come here after the end of the world. I did and this is the review. So if you're reading this, we may all have transcended to another world already.
It's conveniently located at Causeway Bay, near "Under the bridge Spicy Crab" and right next to "Doraya".
The place had about 8 tables for 4 persons. It's slightly more spacious than "Ore no tsukemen" and approaching the size of "David Ramen".
The place had a slightly rough but modern feel to it. Landmarks of Hiroshima and a lot of chilies were painted on the wall.
My wife and I were greeted by a mix of Japanese and local staff. They were all very friendly.
We sat at a table near the corner. Every table had a big basin filled with partially grated sesame:
Choose your destiny:
The menu was in Chinese, English and in Japanese.
First, choose the type of noodles you'd like.
Their signature dish is apparently tsukemen with spicy sauce.
They also had Sansho (Pepper) tsukemen, Spicy Tsuke Soba and a few types of ramen (in soup), such as "Karamiso ramen" .
Also, don't forget to add toppings such as normal eggs (?), eggs marinated in soy sauce, seaweed, extra spring onions.
Finally, choose your destiny...
i.e. the level of spiciness you'd like for your noodles.
My memory of these other options and other details was very hazy because what preoccupied my mind completely at the time was the level of spiciness I should order...
You could adjust the level of spiciness - from 0,1 all the way to 100!
MAD - Mutual Assured Destruction:
One of the Japanese staff told me that one could choose a safe option first, i.e. 1 or 2 and then add more chili sauce if it wasn't hot enough.
My wife did the sensible thing and ordered 2 times the spiciness.
On the other hand, I did not do the sensible thing. After confirming with the staff that 50 would't be fatal, and a final glance at the menu uncovered beer on the menu,
I ordered 50 times the normal spiciness instead.....
After not too long a wait our sauces arrived before the tsukemens:

Lowest: Bibs!?
As you can see, the colour of the sauces and even the size of the bowls were different from each other.
The funny thing was that we were provided with two bibs. We noticed that we were the only two persons provided with bibs.
Perhaps we looked like we have special needs??
It's more like a bowl of chili sauce diluted with vinegar than a tsukemen sauce with chili paste, if you see what I mean!
Bomb shelter:
In essence, it's a hiyashi chuka/tsukemen hybrid.
It's served with a lot of freshly chopped and very crunchy lettuce, chopped spring onions, together with cucumber on a bed of noodles. Two pieces of char siu were also included by default.
Noodles:
Essentially a slightly drier version of chuka soba. Those one invariably used for Hiyashi Soba (冷やし中华: a cold dish consisted of chopped cucumber, seaweek, sesame sauce on a bed of chuka soba. Some vinegar and soy sauce is mixed into it. One of my favorite dishes.)
The quality of the noodles were decent. Having said that, I think a little bit more moist in the noodles will make it chewier. I like those served at New Kotobuki and even those served at Hachiban. No complaints.
Very fresh and crunchy lettuce and cucumber. These will be your bomb shelters afterwards.
The spring onions didn't taste too much of anything. Might as well just dunk it into the sauce to add complexity and texture to it.
Char Siu:
What could I say about this thin and flavourless char siu? It's...healthy.
So it's life purpose will be served by sacrificing itself for the greater good:
First I tried my wife's level 2 explosives. It's very good!
The broth, according to the introduction, is a mix of dashi (Japanese fish broth) and vinegar, possibly with some sweet soy sauce too. The chili sauce felt a bit like Korean chili sauce used to fry octopus!
The sesame adds a lot of texture to it and helps the sauce to cling onto the noodles.
Recommended.
Fire in the hole:
So, now for the level 50 explosives.
It also taste like a vinegar based sauce. This time with less dashi taste but a little bit more shoyu taste. It felt like a lot of Korean Chili Sauce mixed with some Chinese chili sauce (those used for frying noodles like Yue Kwan Yik) !
It's hot!
Lucky for me, it's still manageable (despite sweating quite a bit.)
It's not as hot as the chili sauce provided at LEE KA HOF for example. Those who can handle vindaloo curry should have no problems with 50 (I can't so 50 wasn't a cruise for me).
I'm glad this was a tsukemen so you could control how much of the sauce you wanted with the noodles.
Furthermore, the cucumber and lettuce significantly helps reduces the level of spiciness. So make sure you have your greens!

You could put your name down on the hall of fame.
Conclusion:
Decor: Not too crowded. The large sesame bowl acted as a good partition so you could still have your privacy. Good idea.
Service: All the Hong Konger and Japanese staff were very friendly. A lot of Japanese staff were there. Some of them could speak Cantonese as well. They definitely speak much better Cantonese than these singers (from a song in the game DrumMania, I was reminded about this game after watching "Wreak it, Ralph" ) :
Food: The toppings were just average quality but the whole experience was quite fun.
Level 50 for the fun and fame, but probably less spicy for a more enjoyable flavour because one couldn't really taste anything else other than the spiciness. Level 2 was good.
Some of my friends could handle heavier stuff than I could, so I'll let them try the 100 to see if it's alright.
I'll be tempted to return to try their Kara Miso Ramen.
