My love for the combination of poached egg with spinach is surprisingly greater than prosciutto ham with avocado! With crispy bread beneath is just amazing. Adding pistachio dukkah to the dish enriches the flavours. It doesn't look huge, but I assure you it's very filling for breakfast.
