Pancake game is strong in Japan and this trending fluffy-airy type of pancakes originated from Omotesando are driving the local Hong Kong girls crazy!
Visited A Happy Pancake with a friend on  a Thursday for lunch, line was pretty long and we waited for around an hour before getting a seat.

We were there with empty stomachs so we went for one savoury and one sweet pancake to share.  Namely the Salmon and Avocado Pancakes with Cream Cheese Mousse, and the Milk Tea Pancakes with homemade granola. 

We thought we wouldn't be full but we turned out to be wrong. The Pancakes were made with oat flour and gave it a fibre-like texture and added substance to the pancakes. The cream cheese mousse escalated the taste of the classic salmon-avocado combo and gave it a perfect blend with the pancakes. The milk tea sauce tasted how it should be and blended well with the cream. The granola gave a nice touch to the fluffy dessert.

Overall, the pancakes contented our hungry stomachs despite the fact that they are airy and puffy. The use of oat flour is unique and probably gave the pancakes enough weight to fill our stomachs.
