Armani Aqua takes dining to an entirely new level. Already the spectacular mirror catwalk lined with aromatic candles sets your mood for the special treat that awaits you. We left the noisy hot city behind as we gratefully sank into the comfortable seats at a round table and the friendly waitress immediately offered refreshments along with the menu. We then had the pleasure of receiving a personal introduction to the menu, given to us by none other than the master chef himself, who absolutely fascinated us with his vast in-depth knowledge of artisan salts of the highest calibre. Upon my showing a greater interest in the subject, he even brought out his finest selection, including two of the rarest and most precious salts in the world. It was a privilege to be treated to such a unique culinary experience. (Having my own range fancy artisan salts at home, I consider myself a bit of a connoisseur but the chef's selection really blew me away) I totally fell in love with the "Hoarfrost" (shown on the far left in the above photo), a salt harvested from the heart of the Sahara desert that forms crystals not unlike those of a snowflake and is an amazing experience, not only for its taste but especially also for its incredible texture and fluffy lightness. This salt is now my new favourite.
We started with a glass of champagne and a little Italian bread to try the butter spiced with "Viking Salt", a unique blend of Norwegian herbs that took our tongues on a culinary journey and made us forget the heat outside.
First came our Botan prawns artfully presented on a block of pink Himalayan salt that added a unique flavour to the particularly sweet flesh of this crustacean. Unable to decide which of the condiments worked best - the dusting of liquorice yellow Cypriot saffron salt, the Amalfi lemon mayonnaise or the Clementine granite - we finished the lot.
Next was a pan fried duck foie gras topped with home-cured duck ham (seasoned with a Viking Java mix salt) and a slice of cider & sherry vinegar caramelised green apple. The duck came with gorgeous pearls of two types of man-made caviar, one with Rosemary oil the other with black truffle. Absolutely divine! Inspired by the awesome menu, my dining partner and I sampled two of the infamous cocktails, the "Dirty Martini" and the "Blue Margarita" - both of which disappeared all too quickly, though this could not be blamed on the salt we had eaten...
We then sampled the Sicilian red prawn risotto with Maltese scampi and Malossol caviar. The dish was served with Iranian Persian blue salt, grated directly onto the rim of the plate for you to include at your own discretion. (It was rather impressive to see the huge blue crystal being grated right before our eyes; quite special.) Next came the "Vongole 2014" - a colourful plate of Italian clams and mussels, Spanish baby squid, dusted with Hawaiian black lava salt and served with organic tomatoes on home-made Zizzogne pasta and squid ink reduction.
The slow cooked black cod was served with organic cauliflower and buffalo ricotta cream, Alba white truffle oil and Vicentino foam. Another highlight was the black angus tagliata, 96-hour grass fed strip loin served with warm rocket jelly and my new favourite: Sahara "Hoarfrost" salt. The 24-months parmesan chips and vintage balsamic reduction complimented the dish perfectly. For dessert we shared the liquorice cheesecake and the chocolate fondant dome. An uber-decadent "Great Alexander" cocktail for my buddy rounded off the perfect dinner.
We were both well and truly satisfied when we left and decided we'd be back for sure.
The staff was knowledgeable and attentive and we felt absolutely pampered.
