i would say it is one of the top beef noodle place in Hong Kong!Inside the restaurant, you can see lots of pictures on the wall. The soup is the soul of thenoodles. For this one, even the light one already contains rich beef flavour and it is slightly oily as they use the beef to cooked for a long time

I would say the must add ingredient is the egg. the egg is very rich in flavour and you can observe the colour of the sauce is not only on the top, but also inside. meaning the egg has been soak inthe soup for some time and make it absorb all the flavours. also, the egg yolk wont be so dried as the egg is easily overcooked after it has been in the sauce fr such a long time

you can also add some salts or other spices into the noodels as you like, but i think the flavour and taste of the noodels is already nice!

the white parts are the tendon parts of the beef. As they are not dye into any sauce, so the colour of it remains white and the texture is tender but wont be too chewy

the beef inside is very tender and the beef tummy is very rich in flavour.

slightly spicy is always a nice appetizer and you can finish it at the end to help digesting the food as well
