Oak Tree Ristorante is located in Travelodge Hotel but they are not affiliated. Oak Tree hires Italian Chef and was awarded for introducing Italian cuisine to HK. While food there was decently crafted, being a chef of the cheese wheel pasta was the highlight of the dining experience. Uncommon in HK, the cheese wheel special carbonara was my first requested course offering. The gimmick lies on having the pasta cooked at tables by chef in cheese wheel. Parmigiano cheese wheel and imported Pancetta were used. The Italian bacon is made of pork belly, salted and spiced with black pepper. Because of the fat layer, the texture is much richer than bacon in typical carbonara.
As a curious person, I walked close to the chef and wheel to spot the details. Then I was invited to join the cooking. While the Chef from Milan was responsible for the pasta in the sauce pan, I was flambéing the hard cheese till softened and mixable. Then the cooked pasta was poured into the wheel of cheese, tossed until mixed and creamy. It was an exciting trial.
Not biased since I was the cook, the pasta was great with layered texture. Rather hard spaghetti with strong cheese and quality ingredients. Well worth a try.
Two of us ordered also grilled salmon steak set.

Truffle porcini mushroom cream soup
Homemade tiramisu
Fresh and well-prepared too.
p.s. Coincidently, the boss was sitting next to my table that night. I recognized him from the table paper.
