This indie ramen store has a very authentic vibe, just like what you would find in the back alleys of Japan. Seats are a bit crowded at the Causaway Bay store and there are dividers between each seat. Their ramen is served with different kinds of toppings, thick noodles <3 and tonkotsu base. I ordered the Tamashii. First, thumbs up for using thick noodles. I was having a hard time finding ramen stores that offer thick noodles in Hong Kong. The bone broth has a very rich pork flavour; its texture allows it to attach the flavour to the noodles even without using a spoon. Ajitama is very traditional; pork has the right amount of fat and meat; nori, black fungus and narutomaki all enhance the tonkotsu broth even more. The store even offers mashed garlic and I might have used half a bowl of that. Haha I'm not sorry.
I think this is the best tonkotsu ramen I've tried in Hong Kong for now. The whole thing is very omnomnomy! I even chugged the soup. See below for a little surprise at the bottom of the bowl - Tamashiiiiiii! Thumbs up for custom bowls. Let there be more ramen stores like this tasty one :9
