Korea wave is still on. I found that modern Korea restaurants are always crowded with youngsters. Deep fried chicken, Toppoki, double cheese dishes, BBQ meats, spicy noodle, snow ice and Korean coffee are all irresistible devil with high calories but really fantastic taste. For enjoyment of crispy palate, grilled chicken is equally good. I recently visited a shop named The Hwaduk who is selling Brazier roast chicken.
Located at Cubus, Causeway Bay, the building is famous for upper end dinning places.
Consistent with the image, The Hwaduk is decorated in a cozy western style. However, pricing is very reasonable. It gave me a great start of a weekend by allowing me seating next to window. It was such a sunny day with view of high rise building nearby.
We are served with Korean wheat tea. Dining table is fully equipped with waste basket, paper towel, fork, plate and the most interesting tool, a plier. I found it very functional and will explain later on.
The Hwaduk story tells us why they make a difference! With a brazier built Italian volcanic rocks, they roast chicken in high temperature over 430C. The high heat quickly cooks chicken with minimum water evaporation; then able to creates a texture that is crispy on the outside and soft in the inside. Theoretically, it sounds.
The menu is nicely color-printed and straight forward. It breaks into a few sections covering chicken, combo, pizza, other Korea dishes and drinks. Signature dishes have their own full page on right hand page so the choice is easy.It was a choice of original chicken or seasoned. I did not know it affected the crispiness so I ordered #C5 - Chicken with Rice Cake.

While I was wondering where the chicken came from, I was told that Hwaduk imported fresh chicken, most food and ingredients from Korea. Each chicken was carefully selected and have a standard weight of about 1kg. That was why the texture was more muscular than those frozen chicken we used to have locally. Imported chicken has quality.For a plate of $178 with whole chicken with about 10 pieces, I found it very reasonable.
At the Hwaduk, we are able to enjoy chicken with a clean hand. The small plier and fork really help to tear off meat from bones.

I did not found the dough very impressive though. It looks great with a thin but strong layer. The pizza was as crispy as biscuit on the surrounding only, the inner part was a bit too soft. Chef was likely too generous on cheese and sauce. Having said so, I definitely like the abundant topping. High quality Korea imported cheese which has a strong aroma but not too salty and plenty of rocket salads for a healthy diet. The combination was pleasant and not greasy at all.Chicken must come with some alcohol. We have Soju.

Overall impression to Hwaduk is pleasant. I liked the environment a lot with sufficient spacing and relatively quiet on a Saturday noon. Restaurant staff was friendly and dishes were served with efficiency with right pace. There were Korean customers so I think it should be authentic.
I also got a feeling that other dishes would be good. So, I decided immediately and make a reservation for our lady’s regular gathering next month. I definitely shall order original roast chicken to test if the Italian volcano rock makes a difference.
