Here’s what we had.
Bread basket
Amuse-bouche: salami miniburger- too spicy for me.
Wafer-thin pastry bowl filled with slow-cooked Belgian chicory (菊苣), aromatic herbs, buffalo milk cream, topped with truffle caviar and glazed with chestnut honey. Weird combination of flavors with bitter tones.
Risotto infused with seaweed stock and blended oysters, completed with soya sauce gelatine cubes. Loved it! Fusion of Asian flavors in an umami bomb.
Beef cheek stewed for 24 hours with polenta and onions cooked in cider. Topped with the signature bull-shaped cracker. Loved the melt-in-your-mouth texture of the beef and the creamy polenta.
Added on another main from the normal Cucina menu: Strozzapreti (pasta with a rolled shape) with beef Ragout. Loved the chewy texture of the pasta.
Dessert: Blend of milk, dark, hazelnut, and lime chocolate mousse served with vanilla sponge and winter cherries.
In summary: maybe our expectations were too high but was not wowed. Preferred the standard menu. Excellent service tho.
