Ho Lee Fook has recently undergone a revamp with a new look, new chef and new menu. Now helmed by Chef ArChan Chan, Ho Lee Fook brings some daring and bold fusion concepts to traditional local dishes. 1️⃣Prawn Toast (💰$168)
This was cooked the Okonomiyaki way, with Kewpie Mayonnaise, seaweed, bonito flake, and Bulldog Sauce, which adds in some nice acidity. Different from the prawn toast we had elsewhere, this was 90% prawn and 10% toast. The prawn patty was very thick, springy and bouncy.

2️⃣Wagyu Short Rib (💰$788)
This dish was huge and was good for 3-4 persons. The wagyu is extremely buttery with crispy edges from grilling. Topped with spring onions kimchi and paired with jalapeño purée, the dish was tantalizing to our tastebuds with explosions of umami.

The clams (花甲) were marinated in a sea of clam juice, and bursted with flavors from garlic and chilies. The coriander added some citrusy and fresh notes to the dish.

Made from Kurabuta pork, the meat carried exceptional tenderness from its hefty fat content. The charsiu was coated with a layer of luxurious and dripping honey glaze. It had the most perfect sheen and grill.

5️⃣ Egg Fried Rice (💰$138)
Simple dish yet totally tests the mettle of the chef. A short-grain rice, Koshihikari was used, resulting in a 饮粒分明 dish with no clumps at all. The rice also had a nice bite to it. The dish could further be elevated if the flavor profile could be a little more complex.
