my first bowl of yunnan-style rice noodle - was craving beef shank ('ngau jeen') so i opted for a noodlery that serves it.quite an extensive menu and fun to order - i was given a sheet; you pick the items in the noodle, choose the spiciness, the soup base, and the kind of noodles. there are aboutt 10 types of surimi balls (fish, beef, pork, even 'jeung bau' - balls with a filling; you name it), offal meat (pig intestines, pig ears, beef tripe), wontons, dumplings....ordered 2 bowls of 'choose

ordered 2 bowls of 'choose your own' rice noodles ($24 each!) - 1. spicy and sour soup base, mild, with beef shank and shrimp wontons and rice noodles; 2. exact same but instead of wontons i wanted to try the 'jeung bau' balls with 'sea cucumber and crab roe' (that is what i was called) plus a side dish of 'yau choi' = vegetables with oyster sauce; i chose choi sum (a chinese vegetable from the mustard family if i remember correctly).
the servers were quite friendly! had a chat with the lady at the cashier while i waited for my takeout. a staff politely escorted me to wait outside the dining area.
soup was spicy enough (i did order a mild after all) but didn't taste sour at all? i loved the spiciness that lingered in my mouth after my meal.
the rice noodles were cooked just right - not overcooked and had a good bite to it.
beef shank is very nicely marinated - it was called 'lo sui' on the menu; it had a taste of 'five-spice' ('5 heung'); the tendon was chewy but cooked well; meat still managed to be quite tender!
i was pretty disappointed with the wonton however - upon my first bite the shrimp tasted awfully NOT fresh, i daresay it may be going rancid. the rest of the wontons went down the trash; the 'sea cucumber crab roe' balls tasted awfully familiar - it's the oil + sauce packet from 'sau tao' brand noodles! try it; you will agree. the texture of the balls is awfully floury + doughy; i bet it's more 'flour ball' than fish meat. had about 1/2 bite of it before i left the rest too.
they put in quite a lot of bean sprouts and preserved vegetables - yum! i requested for NO tofu puffs (don't like them at all).
side dish of choi sum with oyster sauce was quite a good portion - it was only $6!!! wah!
will visit again some time; but i will only order the beef shank and something less adventurous - and make it hotttt too!
