Born and raised in Hong Kong, Jeff Chan enrolled in a local cooking school to learn western culinary techniques before stepping foot in the industry at 20 years old. He has worked for the likes of HKCEC, Landmark Mandarin Oriental (Amber) and Aqua restaurant group in Hong Kong, and has also done stints in Thailand and southern France, being trained under 2 stars Michelin chefs Jacques Pourcel & Laurent Pourcel for a year.


-Earl Grey Lightly Smoked Confit Salmon, Lump Fish Caviar
Love how the caviar doesn’t overwhelm the salmon, the smoke is not just for show, the hint of wood definitely added another layer to the dish

Something very southern France
Seafood in extremely generous portion
the creamy and curry like soup has a long after taste
Progression of flavour is well managed and somehow you will be ready for the main after this soup
