Dry Refrigerated Cupcakes

I had originally planned on ordering 500 cupcakes. When I got to the shop, I purchased one to make sure the quality was okay. They all looked beautiful, but the taste & texture just isn’t there. In the shop (a stall in the basement of a shopping center), they are kept refrigerated to a point where the cake turns hard and dry. This is not how cupcakes should be stored, so I had no confidence a large order would be any better. In quality, they are more comparable to store-bought cakes than ha
