Prawn Wonton Soup with Noodles: The noodles are thin, around 22-24 gauge, and very springy. Being used to ramen, it seems awkward to have noodles like this in a soup. These would be great wok fried, where that texture is an asset. The wontons are fantastic with soft but firm skin that breaks to reveal a juicy prawn. The broth is medium bodied with a pork/chicken base. The onions (which I'm told are essential to prove authenticity) add a touch of pungency.
