Hailing from Hiroshima, Bari-Uma has long been a commercial venture with a presence in Singapore for several years. While this is one of those overhyped ramen joints (helped almost certainly by incentivized food reviewers) that tend not to top my to-go list, we nevertheless stumbled across it on a hungry midnight. To sum it up: Bari-Uma ramen features a thick, white tonkotsu shoyu broth (cooked with chicken and pork bones for six hours and delivered from Japan) and thick cut flamed chashu. You get to choose the firmness of your noodles, among other options. The ramen comes out hot and should meet anyone’s expectations for a rich bowl of tonkotsu ramen. Bari-Uma also serves up pork rice bowls and a variety of snacks like gyoza and karaage chicken. Beer, non-alcoholic drinks and simple desserts are available. One portion of ramen typically goes from $85-ish to $118, not particularly value for money for the portion size (which is small for guys).
