When I craved ramen in Hong Kong, Domon was always my first choice until I discovered Sanpachi ramen. The ramen noodles here are flown from Hokkaido and are always cooked to al-dente texture. The soup bases here are up to at least average local Japanese standards - generally rich but not overly salty - but one thing I've noticed is that the ramen tend to be served at hotter (hence better) temperature whenever the Japanese boss is present.
