On a hearty recommendation from a friend, we visited a half-full Mast on a Weds night. Located right next to Escapade Sports and Mother of (not great) Pizzas, it’s a brightly lit, minimalist-ly designed place, that upon entering, feels more like a deli than a restaurant. It has a giant cake display filled with mozzarella-type cheeses and tons of wine everywhere. My kind of place.

It’s apparently an Italian concept restaurant – a mozzarella bar where 95% of the menu includes some version of this cheese, including buffalo, burrata and stracciatella (shredded mozzarella). The wine list is extensive and reasonable (starting at about 300 for a bottle and 65 for a glass: the house Montepulciano is totally fine!) and they have three beers on tap (incl. Peroni of course), with a few Italian aperitif cocktails as well.

This was tremendous – the stracciatella is a bit waterier than I expected, but it still held together deliciously on the toast, and the mushrooms (and truffle oil, which I’m sad to admit worked pretty well) were packed with flavor. Do yourself a favor and top these off with some of Mast’s excellent olive oil and fresh pepper. Phenomenal.

A somewhat bland salad-like dish, everything was cold and basically raw, my friend wasn’t a huge fan. The anchovies/sun-dried tomoatoes were garden-variety out of a can/jar and fine, I really enjoyed the marinated zucchini (crunchy and a bit pickled), but the raw zucchini strips and rocket didn’t do a lot for me. I think a bit of dressing, even if olive oil and balsamic, would really improve for the dish, visually and taste-wise. That said, the burrata is deliciously creamy (and not very heavy), and when we dumped some olive oil and pepper on it, it wasn’t bad. Burrata I still feel works better with bread, so fortunately we also ordered…

Apparently this a roman flat bread pizza? From videos I’ve seen of roman pizza, it’s flatter and looks crunchier, but whatever, it was delicious! The crust is a bit crunchy but it’s wonderfully soft inside, and kills with the aforementioned olive oil. The tomato sauce has real body and there is just the right amount of buffalo cheese so the flavor of the tomatoes still comes through. Wonderful balance between the three key ingredients. 
The pizza is also topped with some paper-thin slices of pancetta - again nicely balanced – and some mushrooms as a garnish. Finally, a pizza place that doesn’t bury a good pizza in toppings. Best dish of the night!

Service was terrific – Alvin answered all our questions and even let us try this wild cheese roll thing – yes that’s a roll of cheese and ham… It’s a new restaurant, but the servers are on point.

All in all, I really enjoyed the meal. Pizza was fantastic and I’ll be back just for that, and I’m not sure any restaurant in HK has access to this level of Mozzarella in all its varieties – look at this just sitting on the counter.

Since everything on the menu has cheese, if you’re not a fan of cheese or even fresh (un-aged) cheese, there’s not a lot here for you, but if you’ve ever had a pizza and wonder, “Gosh I wonder where I can get more of that”; Mast is the place for you.
