At first glance, Shake 'em Buns is a little gem. It is a small American-style joint with a 'dirty' feel (not just the menu), in a way that makes you think it's going to be good. Unfortunately for Shake 'em, it doesn't quite live up to the hype.
The patties were a little over-done, yet seemed a bit sloppy. The taste was fine, but the texture was just off somehow. They have certainbly chosen the wrong kind of bun as well. A good burger bun shoud be soft, so as to allow a smooth bite directly into the patty. They use a toasted thick crusted bun that makes the already sloppy patty break up and ooze out upon biting into it. A couple of revisions, and they could be producing great burgers.
Another little thing irked me. As I left, I noticed that the girl who was moodily flipping the burgers pressed down the raw patty on the grill with her bare hand, then turned around and handled the bun of a cooked burger with the same hand without washing it. The customer who recieved it had no idea that they were potentially eating raw meat juice. I feel fine and I know that beef is 'safer' than other meats in this regard, but cross-contamination is a basic food safety knowledge requirement and the girl needs to be retrained so nobody does get sick.
All-in-all, an OK experience (with a worrying ending), but we won't be returning. Not because of the hygiene issue, but because there are better options in Hong Kong.
