Went to this particular branch recently for some cheap and mid-range sushi.Note that this place is not a Kaiten Sushi Train style one and also one can order by the Piece.Usually, I'm not a big fan of 板前 and 板长, especially when they have crappy local sushi chefs after over-expanding, unlike in the past. (Also I never eat here during Summer in case I get food poisoning.) Having said that, can't afford to pay for 今村, 见城, 鮨広 either everytime I have a sushi craving, especially when they're way over

A few nights ago, I had one of the best 板长 experiences I had.
Was sitting infront of a Japanese chef as well as a more senior local sushi chef, they really did add wonders to the quality. The rice was not overly seasoned, the execution, temperature, taste, texture were all spot on and as good as the better sushi shops in HK.
A lot of fishes and whelks were really fresh, especially the 池鱼 and 池鱼王. The flame-grilled Aburi sushis were also done quite well tonight. The Blue Fin Tuna Akami however was the only let down as it had oxidised slightly at the edges, and they ran out of the Toros for the Blue Fin ones.
This experience was 85/100.

Having said that, if it reverts back to normal standards, it'll probably be closer to around 55-70/100.
