Here’s my take on the offerings, specifically focusing on their pho and another dish, the cool vermicelli with chicken


The Pho Experience

Pho, often seen as the heart of Vietnamese cuisine, should embody a harmonious balance of rich broth, tender meat, and fresh herbs. Unfortunately, Brass Spoon's rendition fell short of expectations. While the presentation was commendable, the broth lacked the depth and complexity one anticipates from a Michelin-rated establishment. It was disappointingly bland, missing the robust, aromatic quality that makes pho a beloved comfort food.

The beef slices, though tender, didn’t compensate for the broth’s shortcomings. The overall dish felt underwhelming, particularly given the restaurant’s esteemed reputation and the price tag attached.


Cool vermicelli with chicken

In contrast, cool vermicelli with chicken was a pleasant surprise. This dish featured perfectly cooked noodles with tender, flavorful chicken, and a medley of fresh vegetables. Overall Impressions
