Went to beerliner to enjoy a mixed berry crumble on a sunny day. Boy, was my day ruined. As I am a pastry chef, I know for a fact that the baking time for a crumble is approx 35-45 minutes, depending on the size. My berry crumble arrived at my table within 15 minutes after ordering. I thought, hmm, maybe the pastry chef or whoever popped this crumble had some tricks of the trade I could learn from to actually have the crumble baked within 30 minutes. Boy was I in for a disappointing surprise. The top bits of the crumble were crunchy (baked enough), however once I dug a little bit deeper, I could feel and even see that the butter was not even close to being baked; it was still mushy, pasty and soft and light yellow, stuck to the berries at the bottom! I told the server that it was not baked long enough, and they took it back to the kitchen, after another 10 minutes of waiting, out came (another?) crumble, and once again, it was not baked well.
talk about an afternoon ruined
