一年一度的端午节又来临,难得在星期中有一天假期,因此计划与太太先到祈望已久的洲际Nobu试吃一顿日式午餐,然后再去看一场Openrice送赠戏票的电影"前度",就这样我俩度过了一个优闲的公众假期。古语有云「未食五月粽,寒衣不入栊」,端午节过后,天气将会份外炎热,最适宜先吃些俱消暑解热的生冷食物,因此很想找一处环境较佳而又不会太挤迫的日式餐厅去享受一顿午餐,最终决定选址在曾入选过全球最佳餐厅十大的Nobu。此餐厅并没有装潢华丽的修饰,反而带有海洋色彩。天花板面砌上旋涡的图案作海洋主题,以梅花间竹的装饰将海洋和贝壳代表的陆地分隔著; 墙上满布著密麻麻的气泡图案,可感受到设计师爱享受阳光与海滩的程度。年轻的女侍应安排我俩座在靠近落地玻璃窗附近的圆餐桌,除了能观赏整个维港景色外,最难得的是餐厅座落于二楼,亦能透过身后那块落地玻璃,从上而下鸟瞰部份位于地库的Habourside自助餐厅及地下的Spoon法国餐厅部份区域,极富时代与空间感,印像中,能有这样穿透不同层数的酒店餐厅设计并不常见,亦见心思。男侍应在我俩正当坐下的同时,已经递上餐牌。以往我俩喜爱要两份不一样的套餐,为的是可以互相分享及尝试

侍应在我俩正当坐下的同时,已经递上餐牌。以往我俩喜爱要两份不一样的套餐,为的是可以互相分享及尝试不同食物所带来的味觉感受,但是次和以往不同的是我俩因太爱吃和牛了,Nobu Lunch所供应的三款套餐中,就只有Nobu Matshuisa Bento Box包含和牛汉堡,曾一度想过应否为了一个和牛汉堡而要这个套餐,因为预期自己会吃到鞋口的烤鲈鱼,可惜自已又较为爱吃另款一套餐的银鳕鱼西京烧,经过一番极速思量,最终仍是选择了这个 Nobu Matsuhisa Bento Box。当我们一想到"便当"盒内那六个食物格的面积时,和牛汉堡的份量有多大已心中有数。由于我俩都是食肉兽,不禁心里自问那区区一格"便当"盒的和牛份量,真的能够满足我们吗?太太本来向侍应示意要一个Nobu Hong Kong Bento Box的,最终因为看在"和牛汉堡"的份上选择了和我一样的套餐。以下便是Nobu Matshuisa Bento Box所供应的六款食物:

侍应把套餐放到我们的跟前,顺带来一个温馨提示,建议我们顺序先从热食吃起。提外话,当时年轻女侍应捧著"便当盒"送到我俩的跟前时,从她面部反应,是丝毫没有一丝笑容,甚至望向经理时有一点紧张,因为经理也同时在场,但当离开时,明显地放松了心情,也开渐露一丝丝笑容。希望一众资深的经理们不要给侍应带来太大的压力,食客是感受得到的。每个入行的侍应,包括一众经理也曾有过新入行上手的过程,将心比己嘛。

Grilled Seabass with Genmai Salsa:卖相甚有墨西哥式风味的烤鲈鱼,是以烤制方式来烹调。厨师放了一些已混合了甘荀粒、洋葱碎、青椒碎、红葱粒及蕃茄碎的圆米饭内来作配料装饰, 一般烤过的鲈鱼肉质大多都是"鞋实实"的,但这里的烤鲈鱼却烹调得出奇地够水准。虽然鲈鱼天生肉质的嫩滑及多汁程度不及银鳕鱼,但这里的烤鲈鱼是甚少有的爽滑,在肉质方面看来亦有点像银鳕鱼,鱼味浓郁亦有点鱼油香,不知其产地来自何方呢!带酸味的墨西哥式配料圆米有点咬口,甚至有点吃著素饭的感觉。

Wagyu Burger Steak:热切期待的和牛汉堡却是令人有点失望,首先沿著汉堡边嘴嚼,边位的肉质颇为干实,其汉堡带有一点姜味。幸而中间的位置尚算有点松软,但松软的程度与时新快餐店比较下还有一段距离,不竟这是烤过汉堡嘛! (或许是忘记吩附侍应所要的生熟程度,但侍应应有责任询问食客嘛!)
。但最想反映的是牛味肯定是有,并且完全没有半点渣滓,但和牛的味道不够明显,可幸中间部份的汉堡,仍能保留少量的肉汁。配菜的萝卜蓉有助减低油腻感觉,本菇的菇菌味道亦相当浓郁,只是我的焦点是汉堡而不是那些配菜。

Grilled Shrimp with Spinach Salad and Dried Miso:无论用来垫底的菜又或是烧虾味道都是一绝。烧虾散发出诱人的焦香,烤过的味道亦相当浓烈,其爽实的鲜虾肉味道令人回味,连虾壳也不会错过,除了剩如的尾部外,真想整只连带虾壳照样吞下肚。说到干面鼓菜,更加是"估佢唔到",干面鼓的味道激似烟肉,微辛之中带咸重,如能将干面鼓的咸味减少,效果相信会更加好。

House Special Maki:主要由三种不同颜色、不同种类的鱼生再加上的玉子、青瓜及蟹子组成的杂锦寿司,看来平平无其但内馅却是味道丰富。将寿司放进口里慢慢的嘴嚼,尝到的先是玉子散发出一丝绵甜绵的口感和味道,然后是三种鱼生带来极鲜的鱼味,外层除了包著紫菜外,另外再用一块片得透薄的萝卜环卷著。萝卜卷、青瓜及蟹子增加了寿司的爽口感觉。为这个杂锦寿司集齐鲜"甜"爽口于一身。

Spicy Tuna Salad:辣味吞拿鱼沙律其秘制酱汁中,带点含酸辣的泡菜味道,但酸辣的程度没一般泡菜来得重手。酱汁并没淹盖吞拿鱼那鲜浓的鱼味,味道丰富之极。说Nobu是Fusion菜真的一点也没说错。与含醋酸的沙律配菜混合来吃,新鲜又健康。吞拿鱼粒的份量也不少呢!


Yellowtail SashimiJalaerño:相对其它食物是较为逊息了。从前在加国旅游时,在Bloor St.光顾过一间韩国菜馆,吃过平生以来最好吃鱼味最浓郁诱人的Yellowtail,由那时开始便认为世上最好吃的鱼生就是Yellowtail,从始便对Yellowtail留下极为深刻的印像。不知怎的,在香港未曾能再回味过这种味道。这里的Yellowtail Sashimi近乎没甚鱼味,但确是很爽滑。它们的酱汁主要是以醋酸及青辣椒的辣味道为主,但酱汁再好,也没有意思,更何况酱汁只是一般,味道令人大失所望。


面鼓汤:汤内可尝到两条本菇及数粒滑硬适中的豆腐,是一般面鼓汤的味道,

啤酒雪糕配花生酥:这个甜品并不是套餐包含的,需要自行另叫。幸好在出发前溜灠过Openrice的网页才知道有这一特式甜品,因为餐牌内并未有刊载这一款甜品供应。总是觉得完美的套餐应该要包括甜品在内的, 再者也觉得啤酒雪糕较一般雪糕较有特色。极之喜爱这个甜品,它没带有一般啤酒的苦涩味道,而麦芽味是相当的浓郁。据餐厅经理所形容,Nobu与日本新泻县一间名为北雪的酒厂合作,以OEM方式生产Nobu品牌啤酒,只会供应给全球Nobu分店。吃时紧记淋上轻带果甜的桃汁于甜品内,会发现冰冻的雪糕含一种果麦的味道。花生酥内的花生味道较想像中淡,有种粉酥的味道及口感。餐厅经理其后更请我俩一尝Nobu品牌啤酒,冰冻的啤酒味道果然与啤酒雪糕亘相呼应。


总括来说,NOBU SUNDAY LUNCH SET会较是次的NOBU Matsuhisa Bento Box 抵吃。论是次所吃的这个套餐,好吃的仍占大多数,是否抵吃则见仁见志。有一点倒想提及,对比NOBU 在洲际酒店的官方网页上所放上的旧午餐牌,不难发现加价的幅度令人咋舌,不知当我完成这一个食评后,来年还欢不欢迎我续会员卡呢! 是次已会员卡结胀的总数是$772
