Procrastination -- We're all so good at it, and what's more, we deny ever doing so too. For endless times I have given up opportunities to eat 土笋冻 for some reasons. Everytime a gathering comes up, instead of making plans around it to make time, I desperately looked for things to do so as to avoid the possibility of ingesting 'worms in aspic'. Then one evening I was at home drinking one of my mother's homely soups when I fished out strips of light-coloured 'stuff' and eating them. They didn't taste like anything I've ever had, chewy but not like jellyfish chewy. More like, edible elastics. The truth came out, that it was 沙虫, but I didn't flinch into puking up. I made an "oh"...and it did taste different, I thought, but the awful truth didn't stop me from ingesting those little worms. It was a revelation.

The next step would be to overcome my fear in the nearest location possible -- having seen albums after albums and heard raves over how 'tasty' the jellied treat really was, I arrived looking into this small joint. It wasn't all that bright to begin with, but when I asked whether my target would be available, the lady nodded asking, "how many would you like". I scanned the menu. For $12 I can get two pieces, and two it is.

It arrived in a flash -- bathing in a shallow bath of soy sauce were two half-domed of worms suspended in aspic. The top glistened against the lights, I carefully picked up a piece with my chopsticks (with spoon supporting) Taking a bite, I realized, that it was slippery and wet, with remembrance of 'jellied veal'. The 'worms' were slightly chewier than I anticipated, but that extra protein tasted rather light and that for fact was a surprise on its own. The jellied aspic took on too much of the soy sauce, perhaps next time I would skip the soy sauce to begin with? Soon enough I found myself slurping for the next one. In similar motions it took me three bites to savour the treat.

When I stepped out of the restaurant after tasting the 'nightmarish impossible', I have the strangest feeling in my gut. I wondered, "Is that it? Is that the fearful item I've been avoiding all this time?" My inner voice told me that's exactly it. It wasn't all that scary, if you can look past the worm part. You'll think it's not easy, but when you eat it, you'll know it's just another of many 'Chinese special treats'. (That should make you feel better).
