Knowing that Sushi Shikon has earned its 3 stars again this year, I was very looking forward to our meal today. The starter was fine, however, the sushi is totally disappointing. The rice was crumbly and fell off from the piece when I reached for the sushi with my hand. All fish selection was mediocre with no surprise. The tamago does not taste fresh at all. The rice was crumbly and fell off from the piece when I reached for the sushi with my hand. All fish selection was mediocre with no surprise. The tamago does not taste fresh at all.
I also noticed that our sushi chef’s hands are wet - with water droplets on his hand - during our whole meal, which to me is odd given the conventional sushi technique.
Overall I don’t think this restaurant deserves the Michelin 3 Stars title. It is far from the original Tokyo branch’s experience.
