Hearing that Raw Bar No.8 was opened by a Singaporean, I have been longing to try this restaurant and finally got to try it for dinner tonight. It was located at Bonham Strand West, several minutes walk from Sheung Wan MTR. Being a restaurant that specialized in oysters, they offered a wide range of oysters from different countries. We ordered a plate of 6 raw oysters, which was recommended by the staff and was written on the board. They were Carlingford, Boomer Bay, Dooriel, Roland Lambert, Ostra Regal and Gillardeau. The staff recommended us to eat from Carlingford to Gillardeau since the flavour will go from light to strong and flavourful. The taste also goes from light to sweet and the texture became meaty and fatty in the end.

Carbonara - It was cooked with guanciale, eggs and cheese. Pasta was cooked till chewy and smooth, with guanciale making it flavourful. It has strong cheese taste as well.

Seared silver cod fish - It was done wonderfully, with sour cream gravy to cook with samphire, tobiko and pomme puree. Tobiko helped to make the gravy even more flavourful. Cod fish was seared till the skin was charred in texture and yet the fish meat was soft and smooth, going well with the creamy gravy.

Strawberry panna cotta - It was presented nicely and colourful, like a piece of art. There were 3 flavours: chocolate, vanilla and strawberry. They were creamy and smooth, melting in my mouth, sweet on my palate. Crumbs and syrup were added onto it to enhance the taste.
