第一次去 '寿司广 ' , CWB, 晚上的 - 有些失望.三点五分.上一次来这里TST的,是〔午饭〕: 评分也是很低,得两分.同完美,差太远.我觉得系比得啱的.问题其实系因为第一,定食的吞拿鱼赤身唔新鲜同条边干了的.第二,中拖罗两件都系腥得好犀利.一件条边系变啡了oxidised的.基本上,师傅门无可能比佢出场的. 食鱼生,生㗎㖞,你揾我嚟比钱$290加一,帮你清啲喺日本飞完嚟香港之后仲隔jor起码一夜,但保存得唔好嘅鱼?人命嚟的,你无理由为了环保唔好浪费咁样嚟〔益〕我法.我哋客人系比钱的吗.还又一样问题 - lunch啲鱼对饭嘅比例小到跟本食唔到鱼嘅真味.隔了一阵,再来了晚餐比最后第三次机会.今次好. 基本上当你地睇清楚我下面'Babedolphin' 食评里的〔相〕同今次嘅大分别,那分别就根本系〔天〕同〔地〕咁大.顺便睇下lunch的frozen小鸟贝,跟今次 大了几个size, 超甜同新鲜5倍嘅鸟贝! 无错误,两次都系鸟贝来的. 不可能吧? 一个字,正.但洗了$1,100一位. 有SAKE, 先嚟两碟佐酒小食吧. >>STARTERS:- 芝士同鲣鱼肠

有SAKE, 先嚟两碟佐酒小食吧.

STARTERS:
- 芝士同鲣鱼肠酒盗 – Great taste of spicy marinated fish intestines and Japanese smooth cheese, but too small to enjoy with sake. Very expensive, around $70. Unbelievable the size of the dish. Taste 9.5/10. Portion 1/10 for $70.
- 醋之小池鱼 – The small Aji was actually cooked/grilled before marination. Comes with 千切salad. 8.5/10
- Dining at the counter, you automatically get 2 small appetizers of a 海螺 and some quail egg in light broth with shirataki like noodles, plus a small glass of apperitif in the form of 桃酒. 6/10.

- Ordered a mixture of tsukemono, which consisted of pickled vegetables. Very professional. 10/10

SOUP:
- Clear Broth Soup with Live Surf Clam added from Sushi Counter directly.

NIGIRI:
Personally, ordered the following -
平目鱼 - 8/10 – Better as thinly sliced.
平政鱼トロ – 9/10. Very crunchy yet flavoursome. Note this is fatty part, on request. Better than normal plainer taste but fatter hamachi.
鯵 (池鱼) – 10/10. Out of season already, but surprisingly very good tonight, as good as it gets with a depth of flavour. Surprise of the night. Better than 深海池鱼, which is unusual.
深海池鱼 – 6/10. Not much sweetness to the flesh. Weird.
ほうぼう (彷伐?)- 9.5/10. Love this fish, cooked or raw. One of the uglier fishes, surprisingly still fatty at this time of year, almost as good as Kinki fish in sweetness and crunchiness.
石鲷 – 8.5/10. Don't know how to enjoy this, doesn't have much character, but it was fresh and chewy in a good way.
乌贼 – 9.5/10. One of the surprises tonight. Its ultra hard to get good cuttlefish served raw, probability is so low. Tonight, had a revelation as it was super sweet, with great knife work.
赤贝 (生)- 6/10. No taste tonight, strange, although it was served from alive. Not typical.
青瓜赤贝边 - 8/10. Great knife work by the chef, dotted with sesame. I guess it overpowered the 'himo' though.
鸟贝 (生)- 10/10. As mentioned before. This was as good as it gets, I've simply not had better. Texture was sublime, tasted of the sea water. In Japan, this is a very cheap shellfish usually.
炙り赤睦 – 10/10. Skin flamegrilled, developed a smoky flavour which complimented the fish flesh, which was sweet and fat.
剥皮鱼+鱼肝 – 10/10. I've had this many times, but tonight's one was perfect, including the liver part. An inexpensive fish that punches above its weight.
飞ぶ鱼 – 10/10. This was very special in a way, because it has all the good qualities of the sweetness and flaky texture of a 池鱼, but without the flaws. Doesn't need the ginger and spring onion in my opinion.
北海道云丹 – 7.5/10. This was very freshly flown in today, but it was not melty enough nor medium-large sized enough to have that surreal melts-in-mouth, ever lingering mouthfeel and sea taste experience (obviously, not looking for when it melts to a blob, especially during spawning season). Very disappointed, although no bitter endnote.
江戸前玉子 – 10/10. Sushi Hiro has limited pieces of this 'special', cake like type of 江戸前 style Tamago per night. Had a strong taste of white baits(?) fish taste, strong egg taste, perfect spongy texture. Apparently also had prawns in it to life it up in the flavour stake.

THE GOOD
*The nigiri shari was also of great quality. Not too sticky, perfectly seasoned.
*The nigiri size in tonight's instance was perfectly proportioned, one could really taste the seafood - unlike 2 previous experiences. 1 lunch experience in the same TST shop, as well as a night experience in the Causeway Bay shop.
*I think the TST shop is better than the Causeway Bay 本店 Shop, especially with shellfishes and also availability of 'whole' fishes rather than pre-filleted portions. I gave Causeway Bay Night experience '3' for last time.
THE BAD
*HOWEVER, tonight's nigiri's had too much overwhelming wasabi inside it. In fact, Sushi Hiro's WASABI is way too hot and not very aromatic, they should change back to freshly grated wasabi in my opinion.
*Way too expensive, considering it'll buy me a meal at Robuchon, Caprice, etc, where there's a lot more kitchen work involved.

Ended the night with Japanese strawberries – 好好味.甜又新鲜!
其实,当 '寿司广 TST' 晚上, 你肯比钱的话,香港跟本喺无对手的,even 见城都要企埋少少.但系真系希望,佢地lunch可以起马有85-90%嘅 Quality. 终于, 写了9X 次 Open Rice 食评, 第一次系香港食到餐我在 OR 肯俾间餐厅 '5分' (Olala Charcuterie Shop 不算 la!). 其实可能仲会比多一至三间的,但食评还在进行中嘅.
