Parma ham, mildly aged. Served with rock melon . A lone pickle helps fill in missing flavours of a light aged ham unifying the sudden sweetness of melon. A rather prudent touch by the chef. A good choice of not so sweet melon that might otherwise steal the limelight of the rather light parma ham.
