Recommeded by my friend, l came here to try the Hitsumabushi. It is a Nagoya specialty which is basically a twist on the usual unagi-don. I arrived around 2 pm so there was no wait. Just liked the name of the restaurant, the decor gave you a feeling of japanese isakaya. The ambience is warm and cozy, seems to be a good place for friends drinking and chatting. Apart from the traditional approach,  you can enjoy some other ways to eat. The chef asked me to split it into 4 portions.

First serving-
Eat 1/4 of the eel without any seasoning.

The unagi is grilled to  crispy outside and soft inside. The soy sauce marinade made it perfect with the rice.

Second serving -
Eat another 1/4 of the seasonings (spring onion, shredded nori and wasabi)

Different from the "thickness" of eating unagi rice itself, these seasonings made the taste more delicate.

Third serving - Eat 1/4
of the eel with dashi broth and seasoning.

The hot broth reconciled all the tastes, showing  a sense of perfect harmony.

Then the final 1/4 you can eat whichever you liked best.

To me, all of these ways taste different but yet really yummy. If you like unagi-don, it is definitely worth a visit.
