If you have time, you can read the little intro on the first page of the menu, where it explains why their ramen is so unique. I have to admit that I really do like tsukemen , so I ended up having the AGURA Noukou Tsuke Ramen ($88)+ (Egg $10). I was told by the server that these noodles would be very firm and they were. I have never had such chewy firm ramen before, but I liked them. The egg was how it should be and the char siu was also very unique as it was flamegrilled with black pepper. The aroma was amazing and the taste was good. However, it was super fatty. Now, to the fish/pork broth. IT WAS AMAZING! It was thick, rich, with a full body of flavours!!! The taste of the dried fish was quite dominant, so it might not be for everybody, but I like the addition of the dried fish in the pork bone broth. There were some chunks of pork in the broth. The broth was very heavy so I had to refrain myself from clearing the broth. Final Verdict:
I understand why AGURA is an award-winning place. I would surely go again.
