(试食篇) Thanks to Black n White for the cordial invitation to test out some of their new cakes and lovely fruit teas, and to give some feedback for improvement. Chef Koo is well known for his appearance on local Television Shows lately as 甜心先生 on TVB. In fact I have already followed him since his days as an Award Winning Chocolatier during his VERO Chocolate days.. .We were given the task of trying out 11 types of different Cakes.. Made with Strawberry Mousse, Vanilla Sponge, Strawberry Jelly and Rose & Strawberry Jam. It is topped with some painted White Chocolate flowers which were sucked out using vacuum principles using a mould, but requires a perfect timing. I liked this as it was 'girly' balances and had a decent Rose and Strawberry flavour. I think if it added some actual diced strawberries inside, it would be even better

This is one of the most interesting cakes on offer... The top is sprinkled with Paillete feuilletine 'crisp wafers' which gave it texture. The central puff pastry is intelligently caramelized from both the top and bottom sides, the sugary coating preventing it from becoming stale by the wettish vanilla custard sitting on both sides. The whipped cream and chocolate sponge layers completed the picture. Pretty to look at at least, and an improvised version of Napoleon. Good but I think the middle pastry layer could be even more soft-crunchy.

With a Chocolate glazing, and Chocolate Rum ganache, also Coffee butter cream, alternating between 8 different layers. This was actually quite alcoholic! If you like rum, or dark chocolate from Venezuela! The texture was decent enough.

- African Mango with Thai Kaffir Lime, Jasmine Tea 香片龙吐珠茶
- Italian Blood Orange Red Tea
- French Passion Fruit Jasmine Tea
The above list is my preferred order of preference and I actually quite enjoyed some of them. I like the fact that these were unique and no one really uses real fruit puree, fruit juice and fruit zest plus quality tea leaves to make their teas anywhere else! My preference might not suit you, but at an affordable price of only around $3X per cup, I think this is actually a bargain and scope for exploring.

This was quite lemony herby from the Kaffir leaves, and the African Mango puree and juice was refreshing for summer. The Jasmine tea component for me could be stronger, and the overall tea can be slightly more naturally sweetened than with sugar. But the tasting portion above was more fruitier for some reason and I think the real version could do with less sugar. I have a personal feeling that, when this is served at the right proportion and with the same amount of ice cubes, the Italian Lemon Pu-erh Tea is going to be the perfect combo for yours truly
