Tsuta from Tokyo was awarded one Michelin star in 2015, since then it has opened two branches in Singapore and now Hong Kong.
I decided to go and check it out.
The menu is simple, they serve two soup bases: shio (salt) and shoyu (soy) where you can choose how many slices of roast pork etc.
According to the media, the soup base contains chicken, seafood and herbs to get that rich broth.
I tried the shio and shoyu ramen and the shoyu is light with a fragrant truffle taste.
The shio is interesting because it has a miso taste and there are hints of mint because of the fresh mint leaves in the broth.

Also had the Ro su meshi which is roast pork slices.
Each slice was tender and soft complimented well by their secret sauce.

Both are recommendable but if you don't like mint, request for it without or order the Shoyu.
