Confit Sea Bass
First look, wow portion is too smallbut again quality over quantity so it’s fine with meleek and potatoes sauce is perfectsea bass quality is good. It is easy to overcook fish but in this case it is cooked well. Good flavour with the sauce. Tough to fuse Chinese veggies with western cuisine. It’s like just boiled vegetables per se.

Wow - one word to describe thisneed to appreciate how this cake is made. Look at the presentation, the interior combination, the use of different textures, different tastes, sweetness and acidity all in balance! Kudos to the dessert chef! Amazing
