Takano Ramen (多贺野) is more than just another ramen shop from Tokyo. It's legendary. In Tokyo it's only open until 2 PM and there are queues at least 1 hour long. It's a small shop run and owned by a husband and wife for the past 20 years. Located in the new K11 Musea, we arrived on opening day at exactly 6 PM and were the first diners in. When we left, an extremely long line started.

The interior is a far cry from the original Tokyo shop. It's beautiful and chic. There is eve a few tables with a tree in tmiddle.

The noodles are all made in house.

The menu is also beautiful. No vending machine ordering here. Menu is in English and Chinese. They offer 7 different types of ramen.

Boyfriend decided to get their signature. The Takano soy sauce ramen ($128). The broth had a delicate balance of pork and chicken with hint of seafood. It was not too salty and rich in flavor. Not too oily as well. The noodles were fantastic. Chewy with a good bite.  One of the best noodles I've had in town. The egg yolk was beautifully runny and a bit on the salty side. The only let down was the charsu which was a bit rough on the tongue.

I had the chasu and duck tsukemen ramen ($168). This included duck meat that was found in the broth. Unlike other places that offer tsukemen, this broth wasn't overly salty. It was still concentrated but not too salty. But after I finished my noodles, I asked for a dashi broth to dilute to drink it and it became even better. Somehow adding the dashi much improved it and I drank all the soup. The noodles were definitely the star here. Wonderful and chewy. Great texture and bite. Even the bamboo shoots were quite good and I rarely rave about the bamboo. Again the only disappointment was the charsu. They were definitely not one of the better ones I've had.

Over all, the ramen was excellent. Though pretty expensive at near $200 a bowl. Compared to Tokyo where it's only ¥700! Service of the ramen was extremely slow but we were warned ahead of time by the staff as they explained it was their first day and still working out the kinks. They apologized ahead of time for the inconvenience. This was forgivable and appreciated for the notification. I'm still pondering if I'll be back. I love the food and service was excellent. But wow ... expensive. I think the price deters me a bit from returning. But I may ... maybe.
