Ta-ke is located on the 12/F Cebus Building in Causeway, an intimate spot that's fine for business or leisure customers. Sit at sushi bar and order the assorted sushi/sashimi sampler. The chef (I had lead Hong Kong chef Chris) will delicately cut a number of sashimi pieces then individually assemble a sushi piece using homemade rice, garnishes (roe, seaweed, caviar, etc.) and lightly graze with the appropriate dressing.
He will then present one piece on a small, clean plate, and he will wait until you are satisfied with the taste before making the next piece.
In all this reminded me of Jiro Dreams of Sushi - a style not often practiced in the US. My favorite of the sashimi pieces is the Tuna belly - absolutely wonderful. And there are subtle hints of flavor in the rice that make soy sauce unnecessary.
Service was excellent - additional staff would wait on me to translate the individual sushi items for my benefit and were genuinely happy that I enjoyed my meal.
Price (HKD 1000 for 9 pieces, handroll, beer) seemed in line with quality.
