顯然是城內的老上海人的吃蟹之地了,我們去的那ㄧ晚皆是大圓桌宴客,上海人呼朋引伴的帶著自家的XO分喝著,大盤的蒸好的蟹上桌,橘紅橘紅的.我們是來吃小食的,叫了馬蘭頭,陳醋海蟄頭,燻蛋,沙鍋獅子頭,蟹粉炒涼皮,蠶豆莧菜,又加了生煎包.
涼皮的質感較我上次在老上海飯店吃的蟹粉拌麵輕薄,吃完不那麼膩和飽肚子.蟹粉的薑味也不那麼明顯.海蟄頭處理的極好,燻蛋的煙燻味不重,只有在蛋白處可找到一些煙燻的痕跡.生煎包底極酥脆,裡頭多汁,極為可口.

香蕉高力荳沙 8/10- 每每吃滬菜一定會點我最愛的高力荳沙,通常是用上糖霜潵面,但這裡用上了秘制過的砂磄,砂糖鬆鬆脆脆的,口感極佳,每一顆也炸得脹卜卜, 綿綿的口感且充斥著蛋白香且富有彈性,但荳沙的份量略為不足。

順帶一提,這裡的脆皮雞好像很吸引,但因我們沒有預訂都吃不到,很失望呢,下次來吃一定要打來預訂喔~整體而言,冷盤的質素不及熱食來得好,食物充滿地道蘇州及上海風味,不像一般港式口味,實屬難得。

忘記了多久沒造訪過留園雅敘..還記得當年初嚐蜜汁火坊的驚艷,那充滿層次的口感,甜美酥郁,震懾味蕾.昨晚再度光顧,景物依然,但味道卻大不如前..可惜.我們點了多個冷盤,包括馬蘭頭,鹽水鴨,薰蛋和海蛰.冷盤水平中規中矩,其中以鹽水鴨最是不錯,肉質保持鮮嫰,咸味適中而帶甘香,不禁想起陳夢因筆下形容癹霉南安臘鴨的美味,他在食經中説道:"臘鴨之所以癹霉,除歸㾂華南的潮溼梅雨天,也間接証明鴨身用鹽份量不夠才癹霉,因此肉身就不會太咸而能保持天然甘香.."而這道鹽水鴨不知怎,卻令我聯想到傳聞中的味道來.至於薰蛋,火喉控制很好,流心蛋黃,煙薰拿掐得宜,果然是名物.我們各人要了一件蜜汁火坊,桂花蜜甜美芳香,包件鬆軟而腐皮酥脆,可是主角火腿卻全然咬不開,厚實的肉質教人花了很多力氣才能征服掉..吃罷,牙骹也酸軟了..很失望..緊隨有百頁雞毛菜,香煎小黃魚,蔥油伴麵,生煎包和椒鹽骨.在外用膳,有一類食材,我是很少會order,就是海鮮,尤其是imported冰鮮養魚和河蝦,可以肯定上得桌都是味寡肉淡,充滿雪味,那怎樣霹去雪味?多採煎炸和重手調味.同桌友伴要吃魚,叫了兩尾小黃魚,我本是興緻缺缺,倒被迫嚐了少箸..

在外用膳,有一類食材,我是很少會order,就是海鮮,尤其是imported冰鮮養魚和河蝦,可以肯定上得桌都是味寡肉淡,充滿雪味,那怎樣霹去雪味?多採煎炸和重手調味.同桌友伴要吃魚,叫了兩尾小黃魚,我本是興緻缺缺,倒被迫嚐了少箸..果然魚肉鬆散,味道寡淡..沒抱持希望所以説不上失望.
上海雞毛菜我倒是歡喜,近乎菜芯葉梗的口感,些微青澀味,頗清新,不錯.
另外生煎包有適當水平,味道濃郁,汁多肉嫰.蔥油伴麵,油量過多,吃得滿嘴油淋淋..

最後要說說的是招牌菜小籠包..店員說是師傅自己包的,不是buy in,我們眼看呈上桌面的小籠包,禁不住嘀咕是否用微波爐叮出來?從乾箇的表皮看來好像是昨晚賣不去放進雪櫃忘了包保鮮膜後的模樣!簡言之..糟透了,我敢說是吃過最差的小籠包之首!
餐後免費奉上的酒釀丸子和果盤也抵消不了失望感,油膩感和..重手味精!單以味精而言,就直接是構成出風疹的元兇了,真是譲人難受又難過..是我口味變了,還是你質素變了..這𥚃幾曾何時是我喜愛的食肆之一..
再見,留園..也許,不再雅聚..

Hairy Crab Roe with Bean Jelly 蟹膏粉皮: I have been waiting a year to have this! Last year I had the crab cream with bean jelly 蟹粉粉皮, but it was nothing compared to this. Just look at that obscene amount of artery-clogging crab roe on top of the bean jelly. Sooo sinfully delicious. No crab meat in this, just pure unaltered crab roe in all its glory. I added a splash of vinegar to cut down on the richness.

Stir-fried Hairy Crab Legs 抄蟹腳: The crab roe dish came with a side of hairy crab leg meat. All the legs were de-shelled perfectly and plucked free of that horrible translucent “bone”. The crab legs were plump and sweet, contrasting well with the crunchy vegetables and ginger vinegar. I love how the most laborious part of having hairy crabs has been done for me.

Braised Noodles with Hairy Crab Cream 蟹粉拌麵: Lo mien at its finest. Crab cream again, this time over a bed of drained Shanghainese noodles. This was just an excuse to gorge ourselves on more hairy crab. The orange bits are the roe of the female crabs, which are hard and generally less desirable than male crab roe.

Shredded Chicken and Bean Jelly in Spicy Sesame Sauce 棒棒雞: Our only non-crab dish. This is a hard dish to get wrong. The shredded chicken was tender, and the bean jelly was cooked just right, not sticky or starchy. The peanut sauce had the right consistency and balance between sweet and savoury. My only complaint is that it wasn’t spicy enough.

Verdict: It’s a bit pricey, but totally worth it for a scrumptious hassle-free hairy crab experience. Hurry and pre-order the crab roe bean jelly before the season ends! Also, service is friendly and helpful. We changed our booking a few times but they were very accommodating. I will be back to try their dim sum next time.

Dishes here are traditional and solid. They are nothing fancy, full of garnish and anything extravagant or exotic. Most efforts are put into cooking techniques and freshness of the ingredients.
Skipping over broken bottles and the colorful bars scenes along Lockhart Road, we arrived at The Broadway building with a group of 5 for an early dinner reservation.
4 cold starters:
Smoked eggs
Smoked fish with dark sweet soy sauce
Huadiao rice wine marinated shrimps > Generous on the wine, very savory.
Bamboo shoots with sesame oil

Braised pork belly with bean curd knots
Honey peas with dried ham > They took out all the pods! Lots of work.

*This is the most eye opening dish tonight; 1) The work the chef had done. 2) Texture and taste. 3) Boneless. We had ordered half a fish but the portion was good enough to be a whole fish. Imagine shredding the soft and delicate fish meat and keeping them in tact. The texture is “al dente”. It’s lightly salted and pan-fried. Mixed in the sweet pickled turnips on the sides and they brought out the natural sweetness of the fish.

I would say almost choices on the menu are good and "it-can't-go-wrong-here". A bunch of VIPs had reserved the private room at the back that night and saw quite a few local celebrities walking by.

今天上司心情好!請我們吃午飯!一行六人,帶領我們去咬野!經過吾知邊棟大廈!便上樓了!就進入了「留園雅敘」。上司對住個餐牌,跟住就對住個waiter指手畫腳,不一會便上菜了。涼拌三絲:三絲好幼,大熱天時,特別醒胃爽口。正小龍飽:皮薄餡靚加上上海浙醋!正生煎飽:皮厚左D但,但都不錯。砂窩雲吞雞:好似(屎暈身)雞湯般,雞很鞋,雲吞也沒什麼特別上海粗炒:很油(利),叫做大碟囉糖醋排骨:略不夠镇江香醋,味道還可以青菜煨面:夠熱,很多菜徑。很爽口。是我最愛的整餐飯都是不錯,但當上司找數時。便碌大雙眼看著張單。那是心裡一寒。吾知係味先甜後苦,算吧返到去才算啦。諗多會傷腦呀。

留園雅敘的水準一向穩定,但不知為何有些菜式常常售罄,星期六午市冇土匪牛肉、冇燻蛋、冇蒸糯肉,真的三無,很是掃興。頭盤:棒棒雞(7/10)的粉皮夠滑、雞嫩、可醬汁有少許偏甜。馬蘭頭(6/10)合格,但不是我喜歡的頭盤。烤夫(7/10)聽聞正宗的烤夫是應手撕的,這裡的烤夫似乎正宗,而且軟硬適中,調味亦合道。醉鴿(8/10)肉嫩、酒香、入味,有酒味的菜式是我的至愛。油爆蝦(6/10)烹調合格,但蝦肉鮮度不夠。毛豆莧菜(8/10)當造的菜果然鮮嫩、毛豆夠腍、上湯做法亦清新。蜜汁火坊(7/10)本來不錯,可惜火腿偏厚,令整體比例失衡,稍遜於杭州酒家。蒸魚(8/10)嫩滑,豉油也不太甜,好味。可幸臨走時結賬發現有折,市道真的那麼差嗎?

烤夫(7/10)聽聞正宗的烤夫是應手撕的,這裡的烤夫似乎正宗,而且軟硬適中,調味亦合道。
醉鴿(8/10)肉嫩、酒香、入味,有酒味的菜式是我的至愛。
油爆蝦(6/10)烹調合格,但蝦肉鮮度不夠。
毛豆莧菜(8/10)當造的菜果然鮮嫩、毛豆夠腍、上湯做法亦清新。
蜜汁火坊(7/10)本來不錯,可惜火腿偏厚,令整體比例失衡,稍遜於杭州酒家。
蒸魚(8/10)嫩滑,豉油也不太甜,好味。
可幸臨走時結賬發現有折,市道真的那麼差嗎?

今日要開工,陰公,食餐好D,㨂左呢間。醉雞--雞味濃,夠滑,份量足䓤爆牛肉--夠入味,牛肉吾靭,但牛肉份量少D蝦仁炒蛋--蛋夠滑,蝦夠爽,夠大隻賽螃蟹--蛋白多,蟹肉少,味道不錯,撈飯正!

今日原本想去樓上食Pasta,但因為佢地服務態度"好"到不得了既關係,我地嬲嬲地決定跳糟,走落黎食呢度!入到黎即刻有人黎招呼我地坐低,真係天堂與地獄既分別!好!我地今次叫左商務套餐,有2個冷盤小食加2個主菜,送湯送白飯送糖水。我地揀左鹽水鴨同蔥油海浙,主菜揀左蝦仁炒蛋同埋蔥爆牛肉。先黎2個冷盤,鹽水鴨好好味,感覺有啲似臘鴨,但佢係唔Dry既,同埋唔似臘鴨咁太咸,送埋飯一齊食啱啱好。蔥油海浙相比起上黎就冇咁濃味,海浙夠晒爽口,如果佢再凍返啲啲就更好喇。跟住黎既主菜,蔥爆牛肉,好香好惹味,味道就夠晒好,但份量真係過份的少,成碟野幾乎有9成都係蔥,牛肉10片都冇!另外既蝦仁炒蛋,味道冇咩特別出色,蛋唔係特別的滑,但講到蝦仁… 全部都碎粒,細細粒,食晒成碟都遇唔到一隻完整既蝦仁。後尾送既糖水應該係南瓜露,味道幾好,唔太甜,又唔係稀到水咁。幾好。總括黎講,呢度野食唔係差,只係用料有點節儉。

新年聚餐,於留園雅敘享用滬菜。地方環境依舊,算上舒適衛生,但食物方面則看似有點滑落,尤其份量賣相感覺比以住退步了一點。 雞絲粉皮:麻醬挺香,粉皮滑口煙韌。素菜餃:同枱友人至愛,素菜餡夠飽滿清新,但個人還是喜愛肉餡多一點。小籠包:賣相一般,肉餡夠嫩,湯汁可追加多一點。鮮魚羹:湯汁調味及濃稠度合心,魚肉量多甜美。醬爆雞丁:醬料味濃,沒預期般帶辣,雞丁滑口腍身。紅燒獅子頭:肉餡鬆化味濃,空口吃略鹹,伴飯吃為佳。白頁小棠菜:太細碟,賣相不大體。小棠菜很翠綠嫩口又夠清甜。松子桂花魚:甜酸汁調味不俗,魚肉都算白滑。

It's hairy crab season and this was my first crab of the season! My friend had recommended this restaurant for really good crab so the 4 of us had dinner here at 7pm on a Saturday night. The restaurant was conveniently located in the heart of Wan Chai, and the decor was classy and grand with spacious tables and seating. It's hairy crab season and this was my first crab of the season! My friend had recommended this restaurant for really good crab so the 4 of us had dinner here at 7pm on a Saturday night. The restaurant was conveniently located in the heart of Wan Chai, and the decor was classy and grand with spacious tables and seating. It was still pretty empty at 7pm with only several other tables so the service we received was prompt and fast.

In addition to their regular menu with an array of traditional Shanghai dishes, there was a special yellow menu just for hairy crab dishes. I was expecting to just eat a regular hairy crab but the selections on the crab menu were surprisingly diversed as there were dishes of hairy crab with bean jelly, hairy crab noodles, hairy crab dumpling, etc. The prices were also surprisingly high. 
 We decided to order 2 traditional Shanghainese dishes and 3 hairy crab dishes for our dinner this night.

1) Stewed Vegetables with Dried Bean Curd ($90) - this is a classic dish with finely chopped vegetables and dried bean curd. As this was J's favorite Shanghainese dish, our expectations were high and this did not disappoint. The vegetables were flavorful yet light so it was the perfect dish to warm up our appetite for the night.

2) Crispy Eels ($120) - one of the best crispy eels I've had! This is actually my favorite Shanghainese appetizer and it's very important to me that the eels are fresh and fried to a nice crunchy state. The eels here were fried perfectly as each eel was crispy and coated with a sweet vinegar sauce. They were addictive to eat and I couldn't help but keep popping one after another in my mouth!

3) Hairy Crab ($400 each) - onto the star of the night! We had to ask them for the price of the hairy crab as a whole as it wasn't on the crab menu at all. When our waitress informed us that it cost $400 for a 600 gram crab, my eyes popped! I know the price of hairy crab can widely vary from under $100 to over several hundred dollars, but I wasn't sure if the price quoted was reasonable or not. Since we had set out to eat hairy crab this night, we decided to go ahead with the order anyways. 
 The crabs arrived piping hot and the work to dismantle the crab begins! As I opened the shell, there was a good amount of crab roe inside. The crab roe was rich and flavorful while the crab meat was plentiful and sweet. The ginger and vinegar sauce provided was sweet and tangy, which was perfect for the crab meat portions. Very satisfying! As we finished eating the hairy crab, a glass of ginger tea was provided for each of us. As hairy crab is considered a "cold" food in Chinese culture, the ginger tea acts as the counteragent to the coldness to warm up your body. The tea was great to help with the digestion, though it can be quite 'spicy' due to the ginger.

4) Stir-fried Hairy Crab Cream with Bean Jelly ($380) - our friend had tried this dish before and highly recommended it! The bean jelly was basically clear flat noodles which were highly absorbent of the hairy crab cream. There was an abundant amount of crab meat in the cream and together with the bean jelly made for a really delicious dish to eat. Again the tartness of the ginger and vinegar sauce was the perfect condiment for this dish as well. Like my friend said, this was like eating hairy crab without all the work!

5) Steamed Hairy Crab Cream Dumpling ($33 each) - we had each ordered 2 of the hairy crab xiao lung bao. The skin of the xiao lung bao was thin yet strong enough to withstand our handling. Not only was there a bit of crab roe on top of the dumpling, the pork inside was laced with yummy crab meat and cream as well. The broth inside the dumpling were rich and flavorful - a perfect ending to round up our hairy crab night!

The service here was excellent on a whole as they were attentive to our needs. They paced our servings with careful consideration as they made sure to wait until we finished our appetizers before bringing out the hairy crab, as well as spacing out the crab dishes so we can concentrate on one crab dish at a time. The food here in general were excellent and consistent - although the prices are on the high side. I would recommend ordering their hairy crab dishes instead of the whole hairy crab as they seem to be a better bang for your buck if you just want a taste of the hairy crab without all the work.

同事跟同事丈夫知道我有一直在寫月餅篇,於一個晚上,就是知道有在寫月餅篇的博文,特地把我叫來去吃吃她家收到的月餅,有好幾款的,實在很感謝同事的心意。 率先吃到的是在灣仔一間上海菜館--留園雅敘的鮮肉月餅,這好像還是我第一次吃到鹹的月餅呢。盒子的外觀上也挺有中國特色的,打開盒子便見有10個似是燒餅的圓餅。貼心的同事還特地幫我把月餅稍稍翻熱。指定動作,先把月餅從中間切開,看看內面的饀料,橫切面是好看的,肉質也鬆化,油分的控制也是不錯,是挺像煎餅的,但以味道跟質感,其實也值得要試,據知價錢好像是$168/10個。相信假如不是同事的慷慨,我應該是沒有機會吃到它的吧。後來看雜誌知道好像店方每天只做240盒呢。

今次去留園雅敘慶祝我既"上海奶奶"生日, 朋友介紹下認識留園雅敘, 呢度雖然係樓上鋪但座位都唔算好多, 唔知係唔係因為兩次去都係星期日, 所以都滿坐。幸好我地早早訂好位, 仲特別要求坐卡位, 兩次都好好彩安排到。不過呢度卡位得買張架咋, 大家想坐記得要訂位時講定呀。講返呢度既食物啦, 我先生一個係土生土長既上海人黎講, 佢地認為呢間既食物都算係幾正宗既, 好少香既上海菜館有嘈蝦及醃篤鮮。呢兩樣菜上次食左, 今次就試試其他吧!今次都係食左D家鄉菜,炒年糕味道濃左D 咸左少少 不過年糕大小剛好 唔會太大舊獅子頭正! 跟飯食一流  味道適中 足料有兩大舊豬肉小籠飽必食!!!! 肉汁KEEP得好好 鎖住O係入面 一個字"正"最後呢個雖然係炸既, 但一D都唔油膩, 好香口, 又抵食!
