Madam S'ate finds its home at the Civic Square of Elements, along with other bars and casual dining places. It positions as a casual bistro with an outdoor dining space. We were seated at the interior where we could find decor with resonance to its Wanchai counterpart. Perhaps we were quite early for dinner (that we had a choice of dinner reservation at 7pm), it was almost self service that we had to ask for the restaurant week menu and waited for someone to take our orders since the servers were busy setting up other tables.

The restaurant week menu cost HKD 438 for a 3 course dinner. There were 2 options in each course. My friends picked Cauliflower soup, Ricotta dumplings, Grapes & Curry for appetizer. Even though cauliflower soup was of cream base, and the impression of ricotta dumplings already seemed a little heavy, my friends actually commented that this was rather refreshing. The aroma of curry and its subsequent stimulus stirred an appetizing sensation that aroused diners' appetite.

I picked the alternative of Warm Salad of roasted beets, carrots, goat cheese and house made duck ham. A non-conventional combinaton. I remembered I also had beets for my appetizer at my first visit to Madam Sixty Ate. The beets in this dish were quite sweet and I was glad the

One of my friends chose Wagyu beef brisket, roast onions and radishes. It was well cooked that shreds of beef were easily sliced from the piece. The portion was of good size to leave enough room for dessert.

The 2 of us opt for Roast seabass, sauteed baby gem luttuce, dill & lemon. Seabass was juicy and tender, but what amazed me and my friend the most was the lettuce. It was exceptionally moist and juicy that we wished we could have more of it! Lemon cream was served as sides instead of mashed potatoes. This was a wise choice that ladies' stomachs would be not stuffed with carbs! It was definitely lighter for having lemon cream every other bite that I almost licked the plate!

Our taste converged for the last course that we all ordered Dark Chocolate Mousse, poached cherries and cocoa nib biscuit. (The three of us tried to stay away from seemingly overly sweet white chocolate - the other option) Well it was very rich in chocolate, but the texture of the whole dessert was not something which I expected. The mousse resembled a melted chocolate ice-cream which was even softer than mascarpone cheese in Tiramisu. The poached cherries were a good complement that its faint sour taste has somewhat neutralized the sweetness. I did not particularly like the biscuit since it was not as crunchy as I had imagined. Bits and pieces were quite sticky and chewy that they got stuck on my teeth. OK this sounded a little gross but exactly described how I felt.

Every dish had a slight tweak from traditional french cuisine. Some were successful while some still needed more fine tuning. For a restaurant week dinner of HKD 438, I reckoned I could have a better value-for-money option. Given it could ride on the experience of its sister restaurant, I hoped Madam S'ate would blossom and improve in my next visit.

We ordered almost everything off the menu, including the duck, the beef, the pork, fish and everything was cooked to perfection. We especially liked the truffled vegetables, the scallops and the starters which really whet our appetites. My favourite was the steak tartare, which I rarely order but in this case really was worthwhile. The French onion soup was also very good with the caramlised onions adding a perfect sweet/savoury rtouch to the robust soup.

We had been there numerous times before for coffee (very good) and brunch with family or business contacts, and the attention to detail including the poached eggs was very pleasing.

Service was attentive and friendly, befitting the robust country fare. Service quality was a little patchy at times, perhaps due to the start up mode, however we had no complaints.

My mother and father have run a restaurant for the last thirty years and they are notoriously difficult to please. Happy to say they enjoyed themselves immensely.

The key to this restaurant I think lies in the owners being there on the ground leading the kitchen and the front of house. This is rare in Hong Kong with its over corporatised dining scene. I will enjoy coming back here.

I booked a table since I knew I would be hungry getting off my Sunday flight and the location was perfect given it was along airport express (ie. Elements). I skipped the in-flight meal on purpose to prepare myself for a great meal ahead.

Decor was clean and simple - white walls and wooden tables with a few quirky drawings hanging from the wall, creating a very laid-back homely flavor to the place. Service was in the same style, quite casual and friendly, but definitely not as attentive and trained as staff in their sister restaurant. Case in point: I was wet from the rain and was dragging my luggage, but none of the staff offered to hang my coat or put aside my luggage; Which was actually fine with me, as it went hand-in-hand with the atmosphere with the place, plus, I was here for the food.
Modern French Onion

And let it begin! So we started with their modern French onion soup(HK$90), which was a modified version of the classic. The ingredients were roughly the same as the classic version, with onions, parmesan and bread soaked in the consomme, but in significantly smaller portion and lower temperatures. One notable difference is the addition of anchovy and preserved shallot, giving the soup a sharper and lighter flair. For the health conscious, this is a great dish; but for foodies, I think most would agree with me that this was nowhere as comforting as the original version served with oozing cheese in a piping hot pot. I simply cannot agree with taking the comfort out of comfort food.

Our next appetizer was a French favorite - beef tartare(HK$145)! Raw beef mixed with onions, greens, topped with a raw egg yolk and sprinkled with paprika, sided with thinly sliced chips - I believe this classic dish does not need any further introduction. I like how they stayed true to the original, because it was delicious! The homemade chips were also perfect, thinnly sliced and crisps, flavored with its original starchy fragrance. My only suggestion would be to be more generous with the chips or replace them altogether with crusty bread.
Barramundi, salad and fries

The main was barramundi with ricotta gnocci and young turnips(HK$285) served with Madam S'ate salad(HK$55) and pomme frites(HK$55). The barramundi was brilliantly done, with crispy skin and juicy melt-in-your-mouth flesh. It was served with young turnips and and ricotta gnocchi, offering mellow contrast to the richness of the fish. It was a very balanced dish with great textures, loved it!
In the meantime, the sides, were plain disappointing, to say the least. For a salad named after the restaurant, I would expect something special. But it was just plain salad drizzled in red wine vinaigrette. The shoestring fries were nothing special, softer than I expected, but to be fair, I know people who prefer softer fries. To their credit though, is that the fries were fresh and hot out of the fryer.

We ordered Sour Grapes(HK$90,left) and Bloody Mary(HK$100,right) to go with our meal. Sour grapes was quite nice, tangy and sweet, and hints of white grape flavor (although the drink was made with red grapes). The Bloody Mary was refreshing as always, but I personally prefer a thicker stronger blend.

To close the deal, we treated ourselves to the fig galette with honeycomb and mascarpone(HK$80), which was supremely executed. The honeycomb was sweet and crunchy, the mascarpone very creamy and vanilla-esque, figs were ripe; these were docked on top a thin crispy layer of toasted almond and carmel, which was based upon a layer of thick cake. The combination was satisfying without being overpowering.

Times when you prefer milder (ie. less adventurous) flavors than its sister, Madam Sixty Ate. Also (hopefully) good for a couple months later when they improve/mature a bit more.

I totally understand this, as they just opened but they really should inform customers when they make their reservations so we can BYO wine, and not have to run down to 360.

3 of us ordered a charcuterie board to share but it took a long time to come. Seeing that the board only had 2 slices of bread, we ordered extra bread. Unfortunately this bread never came (but we were charged). The charcuterie board was a bit on the "small" side. Our starters arrived and generally were OK except the heirloom vegetable salad was more like a pickled vegetable salad. It was when our mains arrived that the evening started to sour. We had ordered 3 main courses and when they gave us sharing plates, we thought it was bit odd but maybe they thought we were sharing. However, when only 2 main courses arrived, we started to wonder if they forgot our 3rd main dish - the wagyu burger. When we asked its whereabouts, we were told "it was not in the system and do we still want it?". It would have been better service if he had said "we are sorry we will make it right now". Incidentally the waiter had asked how we wanted the burger cooked, so we were not interested to hear it wasn't in their system. The waiter then asked me if I had placed my order with him. I said no I did not, but are you trying to blame your colleague? By then we were very upset. When we asked for the bill, surprise surprise! A Waygu steak tartine was listed on the bill! So our burger wasn't in their system, but a wagyu steak tartine was. BTW we also didn't get the wagyu steak tartine. I just don't get when restaurants don't admit their own mistakes. Any problems could have easily been solved and you have a happy customer but instead you have an angry one.

Most of the evening the waiters just stood around. They were not short of staff and the restaurant was half empty. By the end of the night, even the chef was bored and sat on the bar with his computer. This is something that bothers me too. Going to a restaurant to find staff spending their time on computers.
