When we entered this restaurant, the manager asked us to stand and wait for 10-15min and when we looked inside, there were so many empty tables! We asked her if we could be seated in those tables and the manager replied 'just wait!' with a very bad atitude. We were going to leave but then another waitress came over and quickly brought us to our table. The manager came over to take our orders, we asked her what she recommends and she didn't even look at us and answered tapas, paella and the usual

The food was only ok, but too $ for the quality. The bad service will make us not visit this restaurant again.

Brought the family here Tuesday night. They were well set for and happy to assist with our 6 month old baby. Friendly service. Food did not disappoint. Loved the Paella avd the steak which was very good value. Also they have a great salad with berries. Awesome!

We already have been there for diner a few times whether the two of us or with plenty of friends around the table and we always had a good time in Solera. Service trying to do his best even if new face in a quite relaxing atmosphere, meaning space and ability to talk to each other without shouting like today in many places with clean and decent toilets inside the venue. There I can be sure that for once my meat is cooked as desired and can find an interesting wine for prices in a decent range wi

Service trying to do his best even if new face in a quite relaxing atmosphere, meaning space and ability to talk to each other without shouting like today in many places with clean and decent toilets inside the venue.

There I can be sure that for once my meat is cooked as desired and can find an interesting wine for prices in a decent range with plenty of tasty starters to go with. Service like said if any misunderstanding as we experienced once (actually our fault) will put everything back on track with no acr mony and smile  as nothing happened.
題外話/補充資料: Bar is a good place to start the evening and they have now their proprietary crafted beers :)

This is the second time I visited this restaurant with my boyfriend.  The environment and decoration were very attractive and relaxing.  We ordered a meatballs of beef and pork in tomato sauce, grilled squid with a fresh herb with EVOO sauce, spaghetti a la carbonara Serrano ham and 66 degrees egg, roasted suckling pig segovia style quince allioli and roasted apple (portion) and two ginger beers.The quality of food and services of the staffs still great.  It's a memorable restaurant for us and w

Today is the 2nd anniversary for our marriage. I chose a very nice restaurant in DBay which has fire work view near the pier.I came here for a drink twice with my friends before. 唔想食普通西餐 所以選擇這間~看menu還可以,但一食… 不過不失吧( 如果要跟中環,灣仔其他比較的話還是有點距離)這裡唯一優勝的是環境服務很一般 (服務生落錯單,郤倒過來說是客人之過)爭論後雖然最後有上番原本的菜,但受了一點氣整體,氣氛👍,周六2100後有 live band

去愉景灣玩足一日,晚餐時間又餓又熱,邊間餐廳有位,我地唔理咁多就入去開餐,咁好彩比我地食到一間有特色餐廳。烤豬全晚最貴的一個dish,但味道相當唔錯,皮脆肉嫩,肉質唔會好鞋,好多肉汁好重肉味,好好味。牛肝菌雞肉湯飯,二人份量,但我地6個大人每人都有一碗,好足料,一打開蓋已經聞到超香,食落味道非常濃郁,但食得多會有點溜,不過真係好好味,必食。小朋友鐘意食魚,但個人覺得淡左d,但比小朋友食就剛剛好。大人送啤酒當然食下烤魷魚,好香好有咬口,烤得好入味。小朋友食食下終於宣佈無電,好彩呢張high chair夠隱陣,值得一讚。

Black ink Seafood Linguine with a touch of chili,面層放咗一隻烤虎蝦,每條意粉表面都沾有墨魚汁,再加埋其他醬汁同旁邊嘅辣椒粉一齊食。辣度係輕輕透出嗰種,反而鮮味較出。

Roasted sucking pig Segovia style, quince allioli and roasted apple,有別於我哋平日嘅中式乳豬,呢款西班牙燒乳豬外皮仍有韌性,肉汁少但肉質唔鞋口,可以同附上嘅木梨醬同焗蘋果一齊食來減輕膩感。

Rotisserie Chicken – Spanish style whole chicken ,menu話係用檸檬同香草塗抹雞隻表面,再原隻攞去燒。我覺得皮脆,但雞肉太乾身,旁邊嘅薯角同香草汁亦唔太出眾。

Seafood Paella,上面有藍青口、中蝦同大蜆,以高湯、番茄等煮成嘅西班牙飯入面混有什錦海鮮,近鍋邊位置微微焦脆、內層質感較黏稠,調味唔濃,主要來自海鮮同番茄本身。

呢間餐廳嘅菜式有別於我一向認知嘅西班牙菜,以前就只係知道西班牙海鮮炒飯同西班牙辣肉腸,我未有資格評論佢正唔正宗,但整體都算啱口味。

We arrived to find a section of the bar area closed off for his event, which was awesome because normally restaurants we've been to in HK for parties have you crammed in a corner, and so it was more social and easy to get to the bar and chat with friends... they even had some live music setup! This is the second time I have visited Solera and it was even better than my previous visit. My partner and I were invited to a friend’s birthday party in Solera last Saturday. We arrived to find a section of the bar area closed off for his event, which was awesome because normally restaurants we've been to in HK for parties have you crammed in a corner, and so it was more social and easy to get to the bar and chat with friends... they even had some live music setup! Later I discovered they have acoustic music on a Friday and Saturday evenings so if you want a quieter section I suggest the terrace or main dining area. This is a pretty BIG restaurant with a terrace, bar and at least 100 seats with plenty of window space for looking at the ocean and Discovery Bay beach. We even saw the Disney fireworks!
We greeted our hosts and were instantly given a drink, which kept flowing all night as the waitress in our section kept us topped up. Last time we sat on the terrace but this time we had the view from the bar section and it is pretty awesome. The bar is very impressive and I think it is easily one of the most well stocked bars I have been to in HK! They even make their own craft beer, IPA and cider! I don't know any other restaurant in HK that does that.
We had a selection of tapas starting with Gambas, Meatballs and Skewers... all of which were delicious. Then we had Angus Beef Cheek and Pork Belly and both of these dishes were stunning. The beef was tender and succulent and the pork belly just melted in your mouth. This was followed by a Seafood Paella, Chicken and Suckling Pig. Each paella was placed on high tables and shared amongst guests by the staff as was the chicken and suckling pig… it was like a personal buffet at each table and meant that you could keep talking and drinking without having to go find food. The chicken was really tasty and sooo tender. I will be back for more of that!
All through the night the staff were attentive and kept us stocked up with food and drink and I remember a number of rounds of free shots being handed out by the Manager who definitely knew how to make a good party. When the band kicked in with more upbeat music around 10pm the party really got started and it was a brilliant atmosphere. We caught the 1:20am ferry back to HK although we could have stayed later as they were still going strong! A great night!
題外話/補充資料: My friend mentioned he paid $400 per head for the party and for that 40 people ate and drank all night. If you go on a Friday or Saturday there is acoustic music. The do really good deals on private parties!

We looked at the menu and decided we would get a seafood paella for 258 HKD (outside menu) to share (I knew that most paellas in Hong Kong aren't big enough for two people, but we weren't too hungry). When we got inside, the restaurant wasn't busy. We were sat in a quiet area of the restaurant. When we got the menu, we discovered the price discreptancies between the outside menu and the menus we were given. The new price is 295. We decided that it was too much and we opted for the baby quid and mix veg paella for 240 instead (this item we later discovered is 218 on the outside menu). The female server (I wish I had gotten her name) asked us what we'd like. I guess she was expecting us to order tapas / appetizers, drinks and some mains. When we told her we wanted to share one paella, she said in Cantonese, “淨係叫一個飯啊?”, which translates to "you're ordering only 1 paella?". We were shocked, but calmly replied with a firm yes. She didn't look happy at all. She didn't really bother at that point. She did offer to give us two glasses of water, while she didn't say "you two probably won't order drinks, right?", but she may as well have.
The paella itself was alright. But we were really not in the best mood after having dealt with her attitude. I made sure I asked someone else for the bill and another server (might be the manager) came. Paid, and swiftly left this place. I'm sure the food is decent but I know they didn't appreciate our custom. We checked the menu again when we were downstairs and took a picture of the menu again. I hope the restaurant didn't not update the menu outside because they forgot, not because they were trying to lure people in with the lower priced menu.

Last time when i had meal in solera i was also greatly upset and shocked by the bad manner of that round face native cantonese-speaking asian .That day when we ordered paella, she repeated in brisk cantonese "ok,炒飯"( means fried rice but rather chinese traditional style).And when we ordered ox-tail spring roll, she repeated also in brisk contonese "ok, 春圈"( means spring roll, but also very chinese tradtional style). I am ok with those word of choice for reiteration of order in a chinese restaura

The environment was very spanish, quality of food impeccable but with such greeting from her, i didn't feel like eating in a authentic ethnic spanish restaurant.

When I thought i was over-reacting to this service, another nightmare made me very sure that it was her attitude problem instead of her ignorant in what to say during order Taking.
Here it is .Then My fd ordered a pint of cider which was told immediately after by her that it might be out of stock. We had suggested her to take a look at the shelf to check its availability before we decided the alternative to drink. then she spoke to us abruptly "no, you order now. so that in case that's out, i can fetch it to you immediately ar ma". My fd and I found it very rude and i was offended.
That night i didn't give any tips despite other staff are very polite and passionate. She ruined the whole experience. To be true, i am not gonna pay solera a visit in the short future because I dun want such experience happen again on any celebration day .

Dear Solera,

Thank you for serving us with amazing Spanish cuisine, we must say that your food is one of the best Spanish delicacies that we have tried. Nevertheless, we believe our experience would have been more pleasant if several waiter/waitress appeared less hostile to customers.

We made an appointment at 6.30pm for a table for 3, and a nicely dressed, Cantonese speaking, gentleman with glasses greeted us upon our arrival. He unfortunately stated that our booking appeared nowhere on his list and kindly offered a spare table for us to stay, and we were allowed to enjoy our meals until 8 pm because the tables were fully reserved for other more important customers. While we were touched by his caring offer, we requested to help him finding our booking tele number on his full-on list and we managed to spot out tiny number at the bottom of the page. We were then directed to a table by the window, sat down and awaited the sincere apology from the gentleman. He never came back, so we didn’t manage to thank him for his warm and helpful welcome.

The menu was full of delicious food, and we took more than 20 minutes to make up our mind. Finally, a Cantonese speaking Asian lady with a rounded face came by and took our order with passion. She listened extremely attentively, without speaking a single word to disturb my chains of thoughts, and used a paper and pen to jot down each order that I pointed out. At first I thought she did not respond because my Cantonese was such a low class language for her, so I tried blending in some English words like Caesar salad to try upgrading myself. Nevertheless, she left without a single word after our order, and we were extremely impressed by her manners to remain silence throughout our conversation.

Sangria was the first item to arrive. Following the Asian tradition, we switched our mobile to camera mode, getting ready to start our memorable night, while we noticed that our red Sangria appeared white in colour. We hesitated for seconds, wondering if it was the lighting, or we suddenly became colour-blinded. Finally we asked for help from the lady who took our order, and she calmly pointed out that it was a white Sangria. She explained that my finger was pointing at the white one, rather than the red Sangria, hence the order. She then took our Sangria away and exchanged for a red one, and again, we missed our chance to thank her for her affectionate help. I then punished my finger hardly, although it pleaded not guilty to its charges.

The pork belly and clams in white wine are our favourite dishes. The pork belly was soft, melted in our mouths upon its entry. The white wine sauce for the clam was the best that we have ever tried! We couldn’t resist ourselves from drinking the sauce like soup even after the clams were all taken. Additionally, we love the lobster baked potatoes, tasted super flavourful. We also tried the mixed mushrooms but they were a bit sour to us. The portion of the tapas was also bigger than we expected, so we ordered too much food in the end. The food was indeed wonderful and definitely worth the money!

Finally, a small piece of advice from me is that it is crucial to recruit some approachable staff to assist your customers. The friendly environment adds significantly more to your marvellous delicacies to create the most pleasant experience for the people, who wish to celebrate their big days at your elegant Spanish restaurant.

某天和家人暢遊愉景灣,難得的全日家庭聚,自然安排晚餐的時間也是小弟的責任,愉景灣的西餐廳已蔚然成風,在D’Deck大樓裹璀璨,夕暮漸深,緩緩地撇下那白色禮堂,走到巴士站候車,片刻已至碼頭總站,步上了二樓的Solera Spanish Cuisine Concept。總廚是來自西班牙華倫西亞的Jose Mascaros和Martin Torrejon,前者是前尖沙咀Fandango餐廳的掌勺,後者是華倫西亞餐廳Campas的前總廚。所以其實很多菜色很有Fandango的風味,2013年開幕至今,仍然一貫的受歡迎。

其有分室內和室外之別,如在下午坐於露台邊實是賞心樂事,但是晚有點悶熱,所以還是選擇了室內的位置。裝橫上,完全是走上了Fine Dining的路線,每枱亦各自暢談,柔和的燈光帶出了幽秘,暖色調更易讓人撬開話題,窗外遠處的迪士尼煙火,和人們各自擦出的火花,同樣地渲染着這星期天最後的餘暉,一條懶腰可以在這裹全力地伸展。

Deep Fried Squid Andalusian Style with Smoked Paprika Aioli
西班牙南部炸魷魚配煙燻紅椒蒜蓉醬 $78

這裹的Tapas款色極多,斟酌需時,家中兩老的舌頭還算少碰上西班牙菜,口味還是別叫得太過別致獨特,未得回響太多。西班牙的Tapas其實多達三百多種,花多眼亂是少不免的事,調味時總是離不開西班牙四寶:橄欖油、蕃茄、蒜和紅椒粉,每每都是其在國家享譽誠名之品。而炸魷魚亦是一種很常見的Tapas,而特別在於其調配的醬汁,微辛帶有蒜香,非常惹味好吃,有幾件魷魚是過韌了一點,但其他卻都鬆軟而香口,作為佐酒料非常到家。

Octopus Galician style with potato, Pimento Powder and Olive oil
加利西亞八爪魚伴薯粒,配西班牙紅椒粉橄欖油 $198/200g, $108/100g

Tapas在西班牙語就是蓋子的意思,因為西班牙人在野外用餐飲酒,蒼蠅會被雪利酒的濃甜所吸引,所以會把薄肉片或麵包放在杯口,有時再把食物放在麵包上,漸漸成了Tapas的由來。薯粒來得粉爛了些,薯味不夠但八爪魚卻完全彌補了其不足,爽嫰彈牙而帶勁,永遠的紅椒粉又來得如此的動人開胃,其實西班牙煙燻紅椒粉以La Chinata的四方形鐵罐最為著名,烘焙中亦把木香絲絲縷縷地滲進紅椒粉裹,配上海鮮難得亦屬上品之選,不用怕她太辣,和四川的辣味比來,小巫見大巫而已。

凱撒沙律配低温真空雞胸肉配西班牙芝士及橙肉 $62

凱撒沙律出乎意料地用上了橙肉,沙律醬毫不吝嗇的一大匙放了進去,微微有點覺得太多(本人比較重口味,不消說完全沒問題)帶起了一點點的甜酸味,個人還是喜歡配上鯷魚乾的版本,西班牙芝士的確是很不錯,和Parmensan芝士的口感很像,所以還算相配。

炸薯條配黑松露蒜蓉醬 $48

對啦又是我這個薯條狂人的傑作,但母親可以對此菜的醬汁讚口不絕,雖然薯條的味道像極麥當勞(事先聲明,我自己個人是對麥當勞薯條的易找度和其品質給予認同,一般而言麥當勞的薯條只要不是員工疏忽,中肯地說是相當不俗),但醬汁腴潤濃密,每一口都是黑松露的香味,温和而不烈,熱乎乎的薯條配上冰冷的醬汁,只要醮上一下我一個人絕對能清掉一盤。

Roasted Suckling pig Segovia style, Quince aioli and Roasted apple
西班牙燒乳豬 $258/Portion, 498/Half pig, $988/Whole pig

西班牙的乳豬發源地塞戈維亞,廣東的烤乳豬舉世無雙,分別在其不用吊掛式烤豬,而是平放地把醃好了的豬放在陶瓷鍋,再加上大約大半鍋的水進烤爐烤,再用約120度的低温烤焗(廣東乳豬大約是500度左右)乳豬皮的厚度和脆身當然不能與我們吃到的相提並論,但捨棄其之後所得到的結果,是一份悠然自得的軟嫰,而因為用上大約2星期左右的幼豬,所以油脂亦較少,豬皮有一份廣東式所沒有的緊緻、薄身,不會因為太注重皮的香脆而捨其肉質。這裹的火爐明顯是過了些,沒有那份輕薄感,肉味仍然甚濃,皮卻是郁紅而非橘橙色,一過火或少水,就會令皮來得有點硬身了。

Seafood Paella
西班牙海鮮炒飯 $268

Paella源自伊比利亞半島,與法國鍋牛、意大利麵為三大名菜,不過此處的大鍋飯則不太合格,味道是對辦,蕃紅花味道亦夠出。一是離火時收水做不夠好,整體醬汁實在有點密集,米飯不能分明,黏稠在一塊兒;二是材料太少,西班牙紅蝦太貴用上其他無可厚非,但整體盛碟上太多留白,沒有豐富誘人的感覺。不過必須一讚時,味道非常好,撇開口感不說,大鍋飯的味道卻正宗地呈現了出來,聽說這裹的墨汁飯更為出色,下次不拉上媽的話就試試。

Solera Spanish Cuisine Concept的Tapas活色生香,很明顯地加上了亞洲的風味,仍然依舊好吃,主廚不求正宗但求味道的方向亦沒有錯,其實一向都是如些,美食本身只在於味道,舌頭的味蕾就主宰了一切,好吃,其是一種簡單有力而率直的判斷,凌駕於一切傳統、正宗、堅持上。正宗是用來知道知識的味道,堅持是食古不化的努力,傳統是經典而一直雋永的路,好吃卻是我把食物放進口裹自己的感覺,其最為重要。Main Course還需要細心鑽研一番,只是這種微細缺撼,不足以影響全局。

如果要作更深入的探討,是自己不會再分享關於自己的一切,經歷了什麼,做過些什麼,有些東西是寧願埋葬心房帶進棺材都不願透露半點。因為你會發現,語言是一種很虛偽的東西,非常容易地把所有東西包裝得美輪美奐。你的語言比自身行為更為道德化、更為規律化,但卻是最無法代表你本身。很多價值道德,你過得了自己的心,過不了自己的口,結果在腦裏加工着色,才說出來。

成年人都把這技藝練習得爐火純青,然後說,這叫面具。但面具亦是用自己的手帶上去的。原則和底線的不同,原則是自己給予自己的規限,而底線是自己給予他人的伽鎖。我們的通病是,永遠把底線放在原則上,律己以寬,待人以嚴,又要用語言包裝到自己的原則和底線持平,才會難以坦率。

我並不否定面具的作用,因為這也是相處之道,有時是必要的。

只是如果你無法去找一個或幾個能擷下你面具坦誠面對的人,就算你在酒店裏喝着Peter Michael的Au Paradis,也比不上當初那瓶幾塊錢的可樂。

那種悲傷和篤定,不是人人能承受得起的。當然,沒有人左右你的選擇。
