Wan Chai is one of the districts, if not the most, with the most number of good ramen-ya and all the shops are in close proximity. This’s definitely a bold move for this newcomer from Japan to stake their claim in this competitive landscape🧐For my first visit, I decided to take the staff's recommendation and ordered the 𝗦𝗽𝗲𝗰𝗶𝗮𝗹 𝗦𝗵𝗶𝗼 𝗥𝗮𝗺𝗲𝗻 特選鹽味拉麵 , though I was mistakenly served the 𝗦𝗽𝗲𝗰𝗶𝗮𝗹 𝗦𝗵𝗼𝘂𝘆𝘂 𝗥𝗮𝗺𝗲𝗻 特選醬油拉麵. First thing first, the broth was rich and intense with a prominent shouyu saline flavour. However, the depth and sweetness of shouyu seemed to be lacking🤔 Thankfully, the yuzu helped to balance out the saltiness, while the charred onion provided an added layer of flavour that elevated the dish. One thing I particularly liked was the broth remaining hot even after the noodle👍🏼
The curly noodle, without much character tho, did its job to carry adequate amount of broth for a satisfying slurp. Wish it a bit harder for my personal liking tho🤏🏼
Overall, this shouyu ramen is a decent addition to the HK ramen scene. Although the service was a bit rushed and green during the soft opening. I'm excited to come back and try their shio ramen next time 😉
