Excuse the lack of photos - as I didn't take any for last 2 visits, once in July and once in Dec 09.Anyway, ordered the following @ last visit:1) Beef Black Tripes + Fish Floss Noodles:I also ordered this last time. Told shop to sprinkle them on top of the noodles on separate sides, rather than together - as they don't work well stacked on top of 1 another. My dish then had Tripe on 1 half, Fish Floss on other half - yet funnily enough, I saw other customers' dishes with say Tripes or Goose In
Anyway, ordered the following @ last visit:

I also ordered this last time. Told shop to sprinkle them on top of the noodles on separate sides, rather than together - as they don't work well stacked on top of 1 another. My dish then had Tripe on 1 half, Fish Floss on other half - yet funnily enough, I saw other customers' dishes with say Tripes or Goose Intestines in the middle, and shrimp roe or floss on the outer rim! I think they should keep it this way.
BUT 1st things 1st - the NOODLES have improved tremendously. Nowadays, it has more noodles taste, it has more eggs influence (but still not much) and the texture is less rubbery, its actually quite good and just about spot-on for texture! They even put more rendered pork oil as lubrication in. Tripes were good.
2) Fish Floss + Shrimp Roe Noodles:
The Shrimp Roe's here are actually quite good, in fact, better than A LOT OF SHOPS, and its easily better than that very over-rated 祥記 in Macau! Its slightly aromatic here, but also carries a decent enough, Shrimp Roe's concentrated umami taste (my long over-due review of 六記 in Macau will come soon, for comparison, watch this space. ).
The Fish Floss this time around was also way better! Not burnt in taste anymore, it was great. The side soup this time also was better than last time - less of 羅漢果's sweetness, though carried more depth of pork and prawny taste.

Not sure if 楊記麵家 is listening to the Customers or they're practical enough to be keen on maintaining the Michelin Tyre Man's recommendation status, by steadily improving their quality esp. with the noodles and toppings. All I know is that, I'll be back: For their noodles, toppings, soup and also their killer of a Chili sauce!
