As one of the Michelin Bib Gourmand’s restaurant, Shugetsu is famous of its tsukemen ramen but I came here for their Shugetsu ramen instead. Their soup base is quite prominent as sardines, mackerel and kelp were fermented for 18 months in a 100-year-old wooden basket so the taste was really rich. I went with the original flavour but it was on the saltier side. If you like it to be less intense you could choose a lighter flavour. They make their own noodles and were very al dente. I liked the mild charcoal smell of the pork belly slices and they’re not as fatty as other ramen places. Overall it’s a good ramen place for a quick lunch.
