傳統日式料理店去得多,間中也會走訪一些新派料理店。餐廳以「松」為名,首予人一種雅緻的印象,再細看英文店名 Matsu Japanese Restaurant & Bar,則予人西日相融的感覺,亦是品酒閒聊的好地方。 餐廳近三份一位置,是壽司師傅表演的吧枱舞台。近窗邊的位置,是一排西式梳化餐桌。細心留意,更發現餐廳用圍板間開了一廳房位置,用餐環境更理想私密。 是晚的前菜小碟是漬茄子,茄子色彩亮麗,腍身入味,是健康可口的餐前小吃。 鱈魚乾與茄子剛好相反,以脆脆口感吸引眾人目光。接下來是特上刺身拼盤 • 松,內含七點刺身,分別有魴鮄魚、深海池魚、喜之次、大吞拿魚腩、鰹魚、墨魚及甜蝦。魴鮄魚是時令魚款,屬飛魚科一類,肉質富口感,以白身魚來說魚味算清甜。深海池魚是筆者喜愛的魚款,入口先滑後爽,魚香吸引。喜之次是貴價深海魚,表面經輕輕火炙,魚脂被適量迫出,香口味濃,肉質緊密。大吞拿魚腩雪花分佈平均綿密,入口即溶,非常肥美甘香。鰹魚以香蔥及辣蘿蔔伴以醬油奉上,食味濃香軟滑。墨魚與喜之次一樣輕輕經過火炙,微微帶著一份焦香,吃墨魚最怕韌身,這片墨魚完全沒有令人失望,質感黏軟。甜蝦選料新鮮,味道甜美。
